I like to do a quick black bean nacho meal.
Blue corn tortilla chips.
A can of black beans (heated through).
Then just layer and add whatever toppings you love: tomatoes, lettuce, shredded carrots, salsa, guacamole, jalepenos, etc.
I also like the hummus pizza idea out of the recipe section, haven't fixed it yet, but sounds so good I'm gonna give it a try soon.
Instead of just boring hummus & pitas, you could do a veggie/hummus sandwich.
Slather both of sides with some yummy hummus, and pack it full of chopped lettuce, sliced cucumbers, diced tomatoes, shredded carrots, chopped brocccoli, whatever your favs. are.
Defiantely a good whole wheat pasta with a good marinara (I really like Newman's) and again add whatever veggies your in the mood for.
Chunks of peppers, diced onions, chunks of mushrooms, and yes, even shredded carrots.
I haven't tried it personally, but I've heard lots of good things about tofu scrambles (either for breakfast OR dinner), there should be a recipe in the "recipe section".
