Curried Chickpeas and Eggplant, mixed greens and edamame topped with pumpkin seeds, and some Trader Joe's "Microgreens" salad sprouts.

hehe... you're right, Whisper, this thread did need a bump I've always wanted to try the tofutti cream cheese, but the trans fat has kept me away.

It's Dempster's Ancient Grains. It's really good. I don't really like Whole wheat bread, so I try to buy multigrain, but most of them still have the whole wheat taste. But this one doesn't, and it is really good.

Pictured first: Southwestern black bean and corn salad served w/ lots of avocado and pico de gallo



Second, tonight's dinner: Stromboli, fried mushrooms w/ wasabi dipping sauce (not pictured), and raw veggies w/ roasted red pepper hummus (not pictured); was really regretting that hubby didn't make it home for dinner tonight until I took the first bite. No hubby = more for moi.

My dinner last night:

I made this recipe last week: https://www.veggieboards.com/boards/s...ot+dish+recipe



And this week I changed it like so:

Substituted one can drained diced tomatoes for the chopped tomato.

Added 1/4 head choped cabbage.

Just used the whole can of black beans.

Left out the chopped potatoes and made baked potatoes instead. Oh, it was yummy, easy, and my husband just went on and on about how much he liked it. Lttle does he know, because he didn't bother with butter on his potatoes, he ate a vegan dish, muahahahahaha!

Yummy baked Falafel. I love them deep fried, but no. So i bake them, and they are really tasty, but they are quite fall-apart-y. Any suggestions?

I'm starving now...



I haven't had food like that in a year... and that was at an organic restaurant.



My meals consist of whatever is in the fridge or freezer that I can stick in the oven. When I'm at school: canned pasta. When I'm off to work: Subway.



*sigh*

Maybe the picture is too big. I had that problem, I just used my photo editing software to resize the image and save it to another folder. Then I had no problem.
