Thank you all! It definitely doesn't feel like it's been over a year already.. I used to eat dairy like it was going out of style, and I was one of those notorious "vegetarians" who ate fish and didn't know/care about gelatin, animal stock in restaurant sauces, rennet in cheese, etc. just prior to my conversion. I've had a net loss of about 8-9 pounds since going vegan, have a ton more energy now that it's easier for me to eat a balanced vegan diet, and have a clearer conscience now that I'm not contributing so much to animal cruelty and environmental destruction.
Some days I wonder why I even bother, and then I have days like this where I can really think about how I'm doing my part to better myself and raise awareness in others just by being an example of a happy, healthy vegan.
