Gluten is from wheat. It's a commen allergen, but not animal derived.

Gluten is wheat protein. It gives bread dough its 'gooey' quality. Gluten is a concern for many people because it is a common allergen.

Gluten is also what gives seitan its firm goodness, too (seitan is made from gluten flour for the newbies that might not know).

So you can enjoy your potstickers without fear or guilt.... or without giving anyone serious doses of what for.
