I know this is kinda like the thread in the healthy forum... but Im only interested in what vegans are having for dinner... you see, I am not very creative, and I have been cooking the same dinner for the last few months (brown rice, veggie baked beans, and steamed potatoes, carrots and sometimes corn)



Anyway, because of this monotony my bf and I have started to eat out ALOT over the last several weeks... granted we havent really had any dishes to do, but at the same time its a major drain on our pocket books... so I need some new ideas... So I figured if you guys just told me what you had to eat each night then I could pick some things that he would like too (hes an omni) and we can stop eating out... thanks a bunch

I'll start with what I had last night...



We went to TGIFridays and I had a side of jasmine rice overwhich I poured a cup of spicey black bean soup and I had a side of veggies (yellow and zuccini squash, red pepper, red onion)



bf had cow burger and fries

last night i had a big salad with lots of carrots, cukes, tomatoes and broccoli, topped with crackers and vinaigrette dressing, as well as a veggie burger with barbq sause, apple juice, and a cookie

I ate @ 4pm & 7pm: @ 4 I ate 1/2 a pizza w/ vegan kamut crust, vegan cheese, sundried tomatoes, capers & olives, w/ grapes & tea for dessert.

Later on I ate pica de gallo vegan rice chips, a spinach/avocado salad, lemonade & 2 scoops of soy ice cream.

last night was an unusually simple night for me.



lima beans, broccoli, beets with some braggs to season over brown rice.



then for dessert i had baked buttercup squash with apples and molasses.

Pasta with pesto-tofu, peas, carrots, broccoli, cauliflower, and black olives, sprinkled with veggie parmagian. Toasted italian bread with garlic olive oil and some veggie mozzarella.

Last night I made boil-in-bag brown rice (tsk tsk...I was too hungry to wait for the steamer!) and had Tasty Bite Bengal Lentils. (Link at the bottom)

It was EXCELLENT and CHEAP!



I too am in that rut of eating out w/ my omni bf. We JUST moved in together (yay) over the weekend. Once we are settled, we will be cooking at home a lot more.





Tasty Bite has 3 vegan dishes and is available at Trader Joe's (sometimes)

citronella49 and everyone...Here is a helpful meal-planning list. It is vegan and McDougall friendly (low-fat vegan) if you are watching your weight.

If you aren't, just take the main dish idea and mock-beef it up a bit!

Hmm.....last night::a cup of refried beans, pita bread, a grean leaf and carrot salad w/sundried tomato vinagerette dressing and some toffutti popcicles.

Last night I had an apple and some pretzels, but normally I would have a salad w/ hummus and veggies, because that is all my school offers us...



Some easy things would be falafel sandwich, veggie sloppy joes, veggie burritos, tacos, spagetti w/ tomato sauce, veggie lasagna...the possibilities are endless. Take advantage of being vegan and start getting creative!



When I go home on the week-ends, I love making soup. It's so easy too. Maybe you should check out the recipes section of this board and also on vegweb.com. Most of them are awesome and really easy!

We had:

Appetizer -- Seitan pan fried in plenty of olive oil with garlic, tamari, and about 4 cups of greens (kale, spinach, and brocoli) on a bed of whole wheat spaghetti.

Main Course -- Vegan Roulettes (from the frozen section); which are eggplant and pasta rolls filled with tofu and spices covered in tomato sauce. This was served on top of white ariborio rice.

We drank orange juice and water since my wife was feeling a cold coming on.

I also had desert afterwards: about a cup of Soy Dream Ice Cream.

i had some rice with pasta sause and beans at like 10 pm ......... that's a pretty bad dinner IMO

tonight it will probably be a Thai rice noodles cause i'm working 12-8

tomorrow though i might just make something yummy

I'm not vegan, but my meal was

I had cauliflower and potato curry with rice, some leftover jamaican chickpea curry and some hot lime pickles.

I got the recipe for the cauliflower and potato curry from Eastern Vegetarian Cooking http://www.amazon.co.uk/exec/obidos/...710448-1775003, which is a really interesting book with lots of vegan and easily veganizable recipes.

I'm thinking tonight I'm going to make some rice pilaf with my Butanese Red Rice, and I'm going to see if I can get some Forbidden Black Rice and also use some Basmati, and have with it lemon-dill roasted vegetables and breaded baked tofu.

Last night was uncreative - just wanted something fast and easy. So I had a garden veggieburger w/ fat free cheese wrapped in a tortilla. Simple and very good

I felt like crap last night and didn't feel like cooking so my dinner wasn't terribly creative.



Sliced avocado and Veganaise on French bread with sea salt and fresh cracked pepper.



Hardly a gourmet creation. But there it is.

Please! Tell me where you found a fat-free vegan cheese! Did you make it yourself, cause all the vegan cheeses I find are sooooo full of fat

creamy wild mushroom soup (mushroom-veggie broth, salt and pepper, red chile powder, thyme, sage, white wine, porcini, cremini, shiitake, and white mushrooms, olive oil, brewers yeast and nutritional yeast to make it "creamy") with bitter mixed greens with nuts and dried fruit. baked pears and apples for dessert.



tonite's menu:



home-made burritos (black bean-mushroom ragout, LTO, salsa, fresh guacamole) served with icy citrus drinks.
