Mushroom and other vegetables risotto.

 

Also, fiancee agreed to eat only vegetarian meals today!!! :D So, as you can imagine, I'm delighted!!

This Chickpea Panzanella salad has seriously been my new addiction! I had it yesterday for lunch and more for dinner, and again today for lunch when I snapped this pic. I'm actually in love <3 It's romaine, thinly sliced cucumber and red bell peppers (I usually use yellow because it looks prettier and brighter but I ran out yesterday), grape tomatoes, chickpeas, kalamata olives, feta, toasted foccacia, and then I throw together a dressing with olive oil, red wine vinegar, dijon, oregano, thyme, salt & pep, and a teensy bit of honey. I'm terrible at measuring stuff so no exact recipe.

Looks amazing!

I made brown and wild rice with better than boullion no chicken broth.

Kale simmered in liquid smoke water.

And best of all were the white beans simmered with bell peppers and onions in the juice from jarred jalepanos!

I love potato pancakes and used to use eggs. I was so happy that using ground flax worked so well!

 

I don't know how these compare to latkes, I've always liked them thick.

I use 2 T ground flax in 1/2 warm water and let sit while I grate the potatoes and onions. I mix in the flax goop and enough flour to thicken.

These are the only things I use my electric skillet for, with about 1/4 oil to fry. I rarely make them.

I keep meaning to bake them.

sometimes i use ground flax but sometime i do use eggs, i'm 100% vegan i guess but 'm trying, and i make those really often like once-2 in a week.

I had tofu japchae from my local Korean restaurant. It was tasty, though I would have liked an even spicier sauce. I also had a walnut-cinnamon rugelach from my local French bakery. So many great cuisine spots in Chicago!

It's true, Chicago has some great eats.

 

I had mock tuna salad and a tomato, spinach and black olive salad w/ Italian dressing. Thinking about making some brownies.
