Veg friendly road trip snacks? - VeggieBoards

Evening all!

 

I'm a fairly new Vegetarian.  I am facing my first 2 day road trip up the US east coast and am seeking some ideas for road trip snacks.  My mom will be joining me (meat-eater, but will eat anything I pack for us) and we will be keeping our stops limited to gas, bathroom breaks, and quick snack/water/coffee breaks, as will have my baby/cat with us in the car.  We are stopping in NC and I've already researched some veg-friendly options for us for dinner.

 

Here are my ideas for snacks so far:

 

Fruit

Veggies

Hummus

Almonds

PB/Nut butter and jelly sandwiches/wraps

Hard-boiled eggs

Individual cartons of soy/almond milks

Lots of water

 

Anything else I am missing?  Or that you would pack?

You might want to add fruit and/or veggie smoothies in individual bottles (Odwalla, Naked Juice, etc).


Anytime I think I'm perfect, I remember that my cousin lives on an island, and I've never walked over to visit her.

I always over-estimate how much I will eat while travelling, maybe you like to eat light! How about some rice/couscous/pasta/quinoa salad? It would be filling and tasty, but not too heavy for all that sitting. :)
