Lunch - Blueberries, date & coconut balls

Dinner - avocado roll, green salad, negi-tofu sushi, vegetable tempura

Dessert - coconut mocha frap w. soy from Starbucks mmm

B- Hot cereal with raisins, peanut butter, sunflower seeds, cinnamon, nutmeg, wheat germ, chia, ground flax and a splash of vegan milk. A mug of hot tea
S- A homemade whole wheat muffin chock full of zucchini, carrots, dates, apricots, cranberries, sunflower seeds and applesauce
L- Leftover risotto with taco-seasoned veggies (zucchini, cauliflower, bell pepper, onion, garlic and scallions)

D- The last of my fresh produce until Saturday are a couple large beets, a small head of red cabbage, some lemons and some scallions. I think I'll either find a suitable borscht recipe or make some sort of salad/slaw with beans from the freezer.

Rushed food day of fruit and sarni's.

Happily I got a shiny new tube of garlic & herb Tartex yeast pate in the other day. Not sure if you good people in the US can get hold of this stuff (ETA: according to their website it looks like it's available pretty much everywhere except in the US, so I dunno why that would be), but it's super tasty on oat cakes, rye crackers, toast or in sandwiches. Anyway, I had Granary bread (doorstep stylee) Tartex and cucumber sarni's for dinner, and they were Yum!

I had a spinach and avocado sandwich for breakfast. For lunch, I had a grilled "cheese" sandwich - made with Daiya Monterey Jack. It was sooooo good. Dinner will be at PF Chang's and will probably be Buddha's Delight.

Another rushed food day. So far one banana and a cup of fennel tea.

I have a feeling the rest of my day may be mainly Tartex and cucumber sandwiches, again.

Bf will be having homemade chili from the freezer later (slow cooked red bean chili w peppers and mushrooms in a rich mole sauce, served w tortilla chips and shredded lettuce) - so I might snaffle a bit of that later tonight, as I always freeze up hefty portions for him.

Yesterday:

 

Tofu scramble with broccoli and mushrooms, toast

Homemade brownie

Homemade pizza with seitan, shiitake and fennel (for everyone who commented in the photo thread, it was yummy! I just wish I had some vegan friends to share it with, most of my friends can't understand pizza without cheese... any of you fancy a trip to Shrewsbury, UK?!)

Another brownie

And leftover pizza for dinner, a handful of cherries

 

Hmm, that was a lot of pizza and cake! Good chill out day though.

I've been away from veggie boards for a while, but it feels good to be back (on a new account) :)

S: green smoothie (banana, raspberries, silverbeet, maca, acai)

D: cornbread, veggie + bean + amaranth stew - this turned out much better than I expected!!

S: 2 vegan chocolate mint slice cookies

I made some sunflower mac a week or two ago and I was really pleased. Much more economically friendly than buying cashews. I am already thinking of ways to tweak the recipe to make it even yummier next time.

I had one of the most beautiful salads ever earlier. All it was really missing was orange/red/yellow peppers, cucumber, and baby purple oriental kale and it would have been perfect. Maybe carrots, too. (it's no surprise that one of the best ways to cheer myself up is with a pretty salad!) It was swiss chard, baby kale, and spinach, with pepitas (pumpkin seeds), alfalfa sprouts, several kinds of edible flowers, and sprouted lentils, sprouted mung beans, and a mix of other sprouted grains/legumes/others that I bought in a mix. So, so delicious and so very pretty.

Today has been a very junk food kind of day.  More studying than eating I'm afraid.  

 

Soy yogurt with granola

Vanilla Almond Dream Dessert Bites

 

Yeah ... that's my caloric intake for the day so far.  Hanging my head in shame and embarrassment.  LOL

 

 

Edited to add:

 

I did finally eat something with a tad more substance.  I had a Boca Chik'n patty and some macaroni and "cheese" - not great, but better than earlier. LOL

B: Carob shake (made with silken tofu, brown rice syrup, carob powder & soy milk)

S: Whole pink grapefruit

L: Polony & rocket sandwich (made w Brown bread, Fry's sliced Polony sausage (vegan and very good indeed), salad cream (vegan), rocket leaves, English mustard)

D: Sunshine Pilaf w green salad - I started making 'sunshine burgers' but after taste testing didn't quite get around to turning the mixture into burgers and served it as a pilaf instead.. (Boiled a cup of short grain brown rice. Lightly sauteed a red onion and a few grated carrots. Toasted half a cup of sunflower seeds. Mixed it all together.  Seasoned with a mixture of chopped fresh herbs, salt & pepper. Taste tested for seasoning. Thought "Mmm this is nice, I can't be bothered with making burgers I'll have it now as a pilaf instead". Served pilaf on top of a load of green salad) There's still plenty left over for burgers tomorrow anyway..

L- Homemade tabbouleh on a bed of lettuce from my garden, topped with beet burger and some hummus dressing. A few chunks of watermelon

D- Garden-fresh raw zucchini, cut with the mandolin slicer and steamed broccoli (also garden-fresh but not my own) topped with homemade cheese sauce (steamed cauliflower, carrot, raw cashews, sauteed onion and garlic blended with miso paste, nutritional yeast, spicy mustard, salt, pepper and a little water)
