Hi Everyone,

 

  • Breakfast: puffed rice cereal, banana, rice milk, coffee

 

  • AM snack: sprouted wheat bagel, peach, more coffee (I'd like to cut down on the coffee but I'm editing the manuscript for my book and it's due soon)

 

  • Lunch: ten-bean soup, brown rice, lentil salad w/sweet potato, parsnips, over arugula, with balsamic vinegar and oil dressing

 

  • Afternoon: apple, several large glasses of ice water, it's 96 here this week

 

  • Evening meal: vegetable lo mein, brown rice, bok choy steamed then sauteed in garlic/olive oil

 

  • Snack: kind of like a Rice Krispie bar my wife made that included cherries, chocolate, held together with brown rice syrup. It was really good!

 

I think threads like this are great to give people ideas and encouragement. I've been vegan for a long time and it's inspiring to see how many people are moving in this direction. Peace to all.

That sounds like a good day's food to me, not greedy at all! Pretty well-balanced, too. grin.gif:thumbup:

Today I've had B: in a rush, clif bar and orange juice in the car. L: Pint of raspberries, a little hummus and ww flat bread w flax.
D: will be spicy black bean burgers (new recipe) with ww buns and gorgeous tomato, spinach, and red onion. Sides potato salad and probably baby spinach salad as well. Dessert will be these ridiculously good berries I bought. grin.gif

Probably the rest of them are forgetting to add snacks and stuff? I know that I do.

 

BK this morning was more of that french bread and olive oil.

Strawberries, bananas, and tea for Lunch.

Dinner will be more strawberries, bananas, nectarines, chinese pear, and maybe some steamed spinach.

it might not be vegans posting; it could be nonvegans listing their vegan food only and leaving out what wasn't vegan.  :)

Phew! Lol. Since starting the 30 day challenge I've been trying to eat as healthily as I can while still making room for treats (I have a massive sweet tooth, plus feeding other people vegan cakes makes them realise its not all lettuce and tofu!), and I love trying out new recipes. I think this is going to last a lot longer than a month; I think its the start of a permanent shift to veganism. The more I think about it, the more it feels like the right choice for me.

 

Todays munchings:

 

Toast with marmite and peanut butter

Chocolate tea (!) with two chocolate chunk cookies

Spicy sweetcorn chowder with a slice of rye covered in smushed avocado and nooch

Another cookie, satsuma and a handful of seeds

Dinner will be salad and baked peppers stuffed with risotto

Have decided to be less stringent with my half-raw thing, But what I ate today:

 

Breakfast: Whole wheat bagel with vegan cream cheese

 

Snack: Banana and about a cup and a half of cantaloupe

 

Lunch: Veggie delite from Subway with avocado, tomato, cucumber, red onion, and lettuce on Italian bread

 

Snack: 2 bananas

 

Dinner: "Breakfast for dinner" night! Tofu scramble (with onion, kale, and nutritional yeast), hash browns, and one slice of cinnamon toast.

S- Planning to bake some vegan apple and carrot muffins today. If I do, that will be mid-morning snack

L- Probably will use up my cabbage and make some more Asian cole slaw with the last of my teriyaki mushroom and barley nutloaf

D- Green salad topped with homemade beet and lentil burger and a little tahini

S- Freshly blended watermelon juice

I had a huge smoothie myself just now and I'm so stuffed! It was mixed berries and bananas with mango. It was supposed to be a "snack" but ended up huge. blush.gif

Breakfast was steel cut oatmeal with raisins and way too much cinnamon sugar. OJ.

Dinner tonight will be tomato soup with garlic croutons that I hope come out good, I've never made them before. And a salad with mixed baby lettuces, fantastically ripe tomatoes, roasted chick peas, baby peas, carrot shreds, and a balsamic vinegar dressing. I had my first experience cooking tofu by myself today, and I was really pleased with the result (as where my parents!).

I made a sort of tofu stir fry marinated in soy sauce with onions, green peppers, zucchini, tomato, and served over linguine. 

Yum. :)
