BK this morning was more of that french bread and olive oil.
Strawberries, bananas, and tea for Lunch.
Dinner will be more strawberries, bananas, nectarines, chinese pear, and maybe some steamed spinach.

Tofu scramble with onion, pepper and brocolli on a slice of rye bread
Banana, apricot, hickory smoked seeds
Slice of rye with peanut butter, satsuma, banana, clif bar
Half a date slice (running fuel!)
Soft brocolli polenta with grilled bbq tofu, a few squares of lavender chocolate
I seem to eat a lot more than most people here?! I have a physical job and run, but mostly I think I'm just greedy![]()
it might not be vegans posting; it could be nonvegans listing their vegan food only and leaving out what wasn't vegan. :)
Phew! Lol. Since starting the 30 day challenge I've been trying to eat as healthily as I can while still making room for treats (I have a massive sweet tooth, plus feeding other people vegan cakes makes them realise its not all lettuce and tofu!), and I love trying out new recipes. I think this is going to last a lot longer than a month; I think its the start of a permanent shift to veganism. The more I think about it, the more it feels like the right choice for me.

Chocolate tea (!) with two chocolate chunk cookies
Spicy sweetcorn chowder with a slice of rye covered in smushed avocado and nooch

Have decided to be less stringent with my half-raw thing, But what I ate today:
Breakfast: Whole wheat bagel with vegan cream cheese
Snack: Banana and about a cup and a half of cantaloupe
Lunch: Veggie delite from Subway with avocado, tomato, cucumber, red onion, and lettuce on Italian bread
Snack: 2 bananas
Dinner: "Breakfast for dinner" night! Tofu scramble (with onion, kale, and nutritional yeast), hash browns, and one slice of cinnamon toast.
B- Hot cereal and tea
L- Homemade Asian-style cole slaw with some leftover teriyaki mushroom and barley loaf I pulled from the freezer
D- Cabbage, carrot and green beans stir-fried in sesame oil with ginger, scallions, liquid aminos and tahini... stuffed into a pita (=

S- Planning to bake some vegan apple and carrot muffins today. If I do, that will be mid-morning snack
L- Probably will use up my cabbage and make some more Asian cole slaw with the last of my teriyaki mushroom and barley nutloaf
D- Green salad topped with homemade beet and lentil burger and a little tahini
S- Freshly blended watermelon juice
Breakfast was a watermelon blueberry smoothie and a banana. I'm a bit hungry, so I may have lunch soon.

I had my first experience cooking tofu by myself today, and I was really pleased with the result (as where my parents!).
I made a sort of tofu stir fry marinated in soy sauce with onions, green peppers, zucchini, tomato, and served over linguine.

Yesterday's Lunch was a vegan Boca burger with avocado on whole wheat bread. I had a banana date smoothie for a snack, and leftover tofu scramble for dinner with cinnamon toast.

It says to use a food processor to make it smooth, but I don't have one and I look my soups chunky anyway!
Last night, we finished the Vegan Quiche (from the Vegan Zombie) I made Saturday and the Lentils/Kale/Sausage soup my wife made Sunday (Tofurkey Sausage, of course). It was yummy.
