Yep, it was three and a half years ago that I decided to go vegetarian. Alas, the exact date has been lost to fables and myths, but I do know that it was in the middle of the month of April of 2000. So April 16 it is.
How will I celebrate? By going back to my vegetarian host parents´ apartment and chowing down on some AWESOME vegetarian food. I know there´s a lentil loaf that seems halfway between a quiche and zuchinni bread, and my host father makes the most awesome creamed soups in the world. Add some fresh local fruit and multigrain bread... and that sounds like a good lunch to me.
