Sweet shortcrust pastry/fruit mince pies

Does anyone have a good recipe for vegan xmas mince pies, or more specifically the pastry? Last time I tried making pastry it didn't turn out well at all, and the only vegan pastry they sell nearby is puff or filo and I really want to make some.

Here's my pie crust recipe from the "Vegan Meat Pie" thread.

*AHIMSA'S* Pie Crust Recipe



2 cups Unbleached white flour

2 cups Whole wheat pastry flour

1 teaspoon Salt

2/3 cup Extra Virgin Coconut or Olive Oil (Coconut is better!)

1 cup Cold water

1-2 T. Soymilk (to brush the top of the pie with)



Mix flours, salt and oil with a fork until it looks like small pebbles. Next, add the water all at once, mixing quickly, forming a ball of dough. Do not knead! Divide into two pieces. Roll out one piece of the dough on a floured board to form your bottom crust. Place crust in a 9" pie plate, crimping and trimming as needed. Poke holes in the bottom of the crust with a fork. Bake crust for 5 minutes. Remove and then fill. Roll out the other crust dough, placing it on the top of the pie. Next, cut a few slits in the top. Bake for approximately 15 minutes and then brush the top with soymilk and cook until browned. Allow the pie to cool completely before serving.
