If you have a ton of eggplant to use up, baba ganouj (http://www.epicurious.com/recipes/fo...Ghanouj-107051) is really good. Read the "comments", I tend to grill my eggplants on a charcoal grill instead of roasting... but very good and goes through a lot of eggplant fast. Leftovers make an AMAZING layer in lasagna too.... just sayin'...
