GREAT use for the crumbs!! I'm excited to see what the "after" looks like!! (And tastes like).



If you have a ton of eggplant to use up, baba ganouj (http://www.epicurious.com/recipes/fo...Ghanouj-107051) is really good. Read the "comments", I tend to grill my eggplants on a charcoal grill instead of roasting... but very good and goes through a lot of eggplant fast. Leftovers make an AMAZING layer in lasagna too.... just sayin'...

Thanks, I just had to keep the heat down when I was sauteeing the eggplant slices because I was afraid the walnuts would scorch. The casserole didn't get baked tonight, but will be baked tomorrow. Hubby got home and wanted happy hour mini tacos and beer, so I said it could wait to be baked. I will post a picture if it looks good.



Thank you for the eggplant suggestion, especially grilling it! He came home with 6 huge eggplant! I bet the baba ganouj would be good on pizza, too. OH! I can grill the pizza, too.Yum. Ok, the lasagna idea is great for him. I can hide the eggplant then!

I will be trying many new recipes in the next week or so to use up the produce..besides the eggplant he came home with way too many tomatoes, bell peppers, lemons, grapefruit, onions, avocados, asian pears, green beans, pumpkins and fresh strawberries, too.



...not to mention all the jars of stuff and the frozen stuff...I think he felt sorry for me getting locked out..



I may be on the boards begging for ideas.

I know! I was doing a major happy dance and then Ii had a small moment of panic ...I just don't want to waste anything..Oh! and pineapple! He got me 2 big fat juicy pineapples!

There are few things that make me happier than a refrigerator full of fresh produce. $15 worth of veggies for me means meals for two weeks... The simple pleasures of a vegetarian (= *pines for the Farmers' Market*

It is amazing on pizza! I use baba ganouj and hummus on my veggie pizzas now. It also makes the veggies stick to the pizza much better than regular tomato sauce does.

That is one of the things I miss from California. We had Farmer's Markets all year round. I guess as long as hubby makes regular trips I am OK though.

I am freezing tons of stuff today..so far I have blanched and frozen about 5 pounds of green beans, 4 pounds of brocolli crowns (thats what he bought, just the tops) and hulled and sliced a whole flat of strawberries...some will be frozen. I saved some of the brocolli to roast along with the red & orange peppers...I love the taste together and it looks pretty.



I gave away a bag of Thai peppers to my grovelling neighbor.. They are grown by a friend in CA and they are so hot they hurt your eyes even sealed in a container.



Tomorrow I will be roasting eggplant, carrots, brocolli, peppers, red onions and I know there is something else...



oh! I also need to roast pumpkins and the acorn squash & spaghetti squash I already had...



The strawberries looked a bit odd when I was slicing them, they are very white in the center, but they are sweet & juicy.



...and tonight is the baked eggplant thigamajig

I make pizza sometimes using pita bread as a crust, hummus as a sauce and top it with onions, squash, artichoke hearts etc.. maybe a drizzle of olive oil and some sea salt on top *slobber*

I got some magnificent salts from TNS! She was my secret santa and I am putting the salts on so many new things.. Pizza will have to be on the list.

We didn't get enough rain this past summer. We ended up almost 4 inches short of what we needed....my Farmer's Market starts in June, too. I'll cross my fingers that we can maybe average out our lack of rain with your abundance of rain and have a good growing season.

I hope so. We got rain 26 out of 30 days this June. About the same time, I moved from one apartment to another and my containers of veggie plants got harassed enough, only to be flooded soon after. Combine that with the tomato blight and I was surprised to have anything to harvest at all...

The Eggplant Thigamjig hot and bubbly from the oven. I was not able to get a nice picture of it on a plate because it was attacked and devoured by hungry hockey fans when I turned my back. So I got one blurry photo from my phone.



I did enjoy the seasonings in it and the walnuts from the recycled crumb topping were a nice bit of texture. A few of the guys had no clue they were eating eggplant..

I think it probably would. I'd probably use less powder, and maybe add a little at a time, but it's all sea vegetable, so it should be similar.

I admit this is not the best porn shot ever taken with a cell phone camera, but I am at work and willing to indulge Semicharmed's need for porn.



This is a picture of tonight's dinner, stuffed mushrooms caps with roasted Brussels sprouts, sweet potatoes and Romaine lettuce. It would be more attractive if I was home and could have arranged it nicely on a plate when it was fresh from the oven this morning, instead of unceremoniously dumping it from Tupperware to bowl and microwaving it. Ahh well, pretty is overrated ^_-

Today is the first time I cooked in way too long. :P Tried a new recipe, basically just some potatoes, zucchini, pepper, bread crumbs, olive oil, and seasonings baked for an hour. It exceeded my expectations and actually tasted really good.



The rice is baby tomatoes and spinach simmered with some olive oil and balsamic vinegar. All very yummy.

I'm about to post a couple of soup recipes that you may be interested in. One calls for red bell pepper but green or red will work.
