Is it ok to eat seeds from spaghetti squash?

I've been cooking squash lately. Today when I opened up my spaghetti squash I noticed that the seeds look an awful lot like pumpkin seeds. Are they good to eat? Nothing toxic? I know that some fruit seeds are toxic and I want to be certain before eating these. I googled it but didn't come up with anything.

Yes. They're good! The theory behind squashes is that most of them started out like gourds and the Indians (Native Americans) ate their seeds. Over time, the Indians discovered that some squashes were fleshier than others and saved the seeds of those in order to grow fleshier squash like we have now. The seeds of pumpkins and other winter squashes are safe and nutritious to eat.

Squash seeds and pumpkin seeds are VERY nutritious. They have iron, vitamin A, vitamin C and calcium. And pumpkin oil is YUMMY!!!!



You could keep your squash seeds and roast them in the oven with a bit of olive oil.

I beg you to please eat them. Anything you can do to prevent the growth of more spaghetti squash would be appreciated.

Yum...I prepare squash seeds just like I do pumpkin seeds. I soak them overnight then put them in my dehydrator with some salt and they are so good. I like the fresh seeds so much better than the ones you buy in the store.

Yep. Not my cup of tea (not a big seed person) but my mom loves them toasted.

Rawgirl, two questions. First on, do you soak your seeds in just plain water or a salt and water combination and secondly, how long do you dehydrate your seeds for?
