What to serve with corn fritters?

For whatever reason, I've been craving corn fritters lately, which are like corn pancakes, sort of. They are a batter that has corn niblets in it and is pan fried. I emailed my mom for the recipe, but once I have it in my greedy little hands, what the heck do I serve with it? I feel like you're not just supposed to eat a meal of corn fritters, but whenever my mom made them when we were little it was with a pot roast or something

I had the same craving once a little while ago, but I actually just ate them as a meal. There's also a really good dipping sauce you can make from soy sauce, which went well with it. I don't have the recipe on hand tho. Salsa goes great with it too. Mmm now I want some...



Let me know if you fimd something that goes well with it. Maybe a veggie soup, salad or even brown rice??

They're really good with sweet chilli sauce to dip in!



I'd suggest a salad - the leafy goodness helps to counterbalance the greasy goodness of the fritters

I was thinking maybe a salad (I'm ADDICTED to Newman's Own Ginger Sesame Dressing atm), but my bf won't eat one and we usually dine together on the weekends. (I guess I could have corn fritters without him!) Minestrone soup actually sounds like it might be good with corn fritters... maybe soup salad and fritters... Man I hope my Mom hurries up with this recipe!! LOL!

I was going to suggest BBQ as well..or maybe baked beans.

I was thinking beefy seitan, but BBQ tofu sounds good, too.

never had corn fritters, but we sometimes had corn bread with split pea soup, and a tossed salad. Adding baked tofu to the salad is good, too.

or chili? i've never had corn fritters, so maybe they'd be too heavy to pair with chili, but i'm thinking about how corn bread goes with chili....

my mum made corn fritters from "Vegan with a Vengeance" and we ate them with vegan stew, vegan chili, i topped a salad with teh fritters, they are good topped with salsa, with (this will sound crazy) vegan seitan stroganoff...



as breakfast dribbled with a little rice nectar and served w/fresh fruit.. yeah..

I thought they might go well with a seitan dish since seitan is sort of 'beefy.' They aren't DEEP fried, at least not the ones we used to make when I was a kid. They're fried like pancakes are fried, so they aren't uber greasy.

Yeah, that's how I made my fritters too. It seemed easier actually (no deep frying for me).

No... My recollection of them is that the batter is made with like white flour, milk, eggs (obviously will be altering it a bit myself!), baking powder or soda or something, and then corn niblets. Then you fry them in a pan with a bit of vegetable oil. Once I get the recipe from my mom I'll post it!

Can someone suggest a corn fritter recipe? I don't even really know what a corn fritter is.

Here is a recipe for them, and they are good. I have never made them, but I was also going to suggest chili to go with them or maybe some vegan "chicken nuggets" and a side of peas or green beans.

I see absolutely nothing wrong with a meal of corn fritters and more corn fritters!



But seriously, I like the salad and/or soup idea, or why not just make them part of a component plate with several other vegetables, like say roasted asparagus (dunno about you, but the early crop is on sale here in the south), steamed spinach, and a marinated bean or pasta salad. Or a baked potato or sweet potato. Or whatever. I'll throw practically any three things on a plate and call it dinner, as long as there's a nice variety of colors, textures, and flavors.

Serve with chilli sauce, or make your own salsa (chop peppers, red onion, spring onion and mix with corn. Then mix through chilli sauce). You could serve sour cream with the salsa (if you find one without gelatine, and aren't vegan)

Simple jam or jelly- or, if you want to be "uptown," a fruit compote- would go well with fritters. Maybe some vegan choriso sausage and cole slaw would make it a meal.
