? about baking with Earth Balance

ok, so i was in whole foods this weekend, and FINALLY saw earth balance sticks. since i had been wanting to buy it for baking and it was only $2.50 (much cheaper than butter), i bought two packages.



ok. so i baked last night using a cookie recipe that i tried a month ago and the cookies turned out awesome then. it calls for a cup of butter, so i used half butter and half earth balance this time. there was a noticeable difference. the cookies got browner, and don't taste the same (can't describe what's "missing" but i think they almost taste oily?). is this a fluke or does earth balance not stack up as well as butter in baking? i was really hoping i could use less better. i was kind of disappointed with the results.

I use Earth Balance for everything, including baking, and I LOVE it! I've never had anything not turn out great! I'm not sure what happened to your recipe, but you might want to think about skipping the butter altogether next time and using pure Earth Balance. Good luck!

They make Earth Balance "shortening"-type sticks...claiming on the package "great for baking", etc...



Then again, like carnelian, I've had success with E/B...but that could be due to the fact that I never baked much with real butter anyway...

earth balance is just like any other margarine, when it comes to cooking. why did you use half and half? maybe you were expecting it to fail and thats why it did... ;-) i've been known to do the same thing.

I've always had success in baking with Earth Balance Buttery Sticks (Which I paid $1.50 for yesterday! Woo!), but the EB shortening tends to make things crunchy. Are you sure you didn't leave something else out? Like Baking Powder/Soda? I've done that before, and boy does that little tsp make a HUGE difference!!

i'm positive i followed the recipe exactly. i used half and half cuz i only had 1 stick of butter so i thought it would be a good opportunity. i won't give up on earth balance yet. the real test will be my brownie recipe.

PunkMommy's brownies don't call for E/B or butter...just veg oil...and they are the BEST vegan brownies I've ever made/had

I've never had any problems with EB either in baking, I love i! But reading your posts makes me sad, it's $3.09 at my HFS!!!!

I do think earth balance tastes like oil. There is a noticeable difference from regular margarine, which tastes more like butter.

Haven't used it in baking. Used it with Mac and Cheese (normal butter and/or margarine tastes fine with it) and it made it taste almost rancid. I think it's closer to oil than butter.

The thing about earth balance is - it's actually made from vegetable oils. Unlike other margarines, which are made from god knows what. I tend to use earth balance when I can't find the olive oil. If you're looking for a "buttery" margarine, that's also good for you, try Spectrum Spread. It's also lower in calories (think of it like, the healthy Country Crock) ... so if that's an advantage for you...

i use the smart balance 37% (tub) that is vegan. i normally just use it for toast and stuff though. i've never tried to bake with it.
