what to do with kidney beans?

Hi. by accident, I opened up a can of kidney beans, thinking they were chickpeas. I don't really like kidney beans much, so what do you think the tastiest thing I can do with them would be?

The only thing i use kidney beans for is for chili.

I would mix 'em in with other beans(chickpeas, black, whatever you like) and create a killer filling for burritos, adding rice, peppers, onion, etc. It would last you all week and you'd always have something to throw together last minute for a great meal.

my mom makes this great thing with TONS of cilantro and walnuts

all you do is put a little bbq sause a little ketchup, some garlic salt and pepper in a pan, heat that up and then throw the beans and cilantro it (with some juice from the can) and some chopped walnuts and let it boil for a few minutes

great with rice or mashed potatoes ...

rice and peas



INGREDIENTS :



1/4 cup kidney beans

1 clove of garlic

1 green pepper

scallion- 1 or two pieces, tops chopped off

black pepper

thyme, salt to taste

2 cups rice

coconut milk or coconut [to make coconut milk]. Cut coconut in small pieces and blend in about 3 cups water in the blender, strain through a strainer to seperate the milk.

(I just use a canned coconut milk lol)



METHOD:



Wash peas and soak in 2 cups of water.

Pour peas and water in a pot with coconut milk, garlic and put to boil.

Cook peas until tender adding more water if necessary.

When peas are cooked add salt, whole pepper, black pepper, thyme, & scallion.

Let season simmer.

Wash rice if necessary, then add to pot. Use a fork to mix everything together.

Cook on a low fire until done- about 20-30 minutes

Kidneys are my faaavourite beans. I'll sit and eat them right out of the can. That doesn't help you much though.



I bet you could use them in a garlicky bean dip recipe, which usually calls for a can of white beans, but Kidneys might be pretty!!

e.g.: In Blender Puree...

1 can beans, rinsed drained

2 tablespoons water

1 tablespoon lemon juice

1 tablespoon extra virgin olive oil

1 teaspoon white wine vinegar

1 small clove garlic, minced

1/2 teaspoon salt

Me, too! I love kidney beans, especially the dark ones. I usually put them in spaghetti sauce...it's really good!

'Hearty Macaroni' uses Kidney Beans... It's my most favorite 'mom cooked it' sort of dish. It's basically, mararoni, kidney beans, tomato sauce, some spices and other things... I'll see if I can find the recipe.

2 cups elbow macaroni and 4 cups water (cook macaroni)



Mix together:

1 onion, chopped

2 tablespoons oil

3 cups tomato juice

4 teaspoons chili powder

salt and pepper

10-ounce box frozen corn

19-ounce can kidney beans, drained



Heat it all up, add the pasta, and enjoy. It's way yummier than it's allowed to be for being so simple.

That reminds me a bit of a pasta e fagioli casserole recipe that my sister recommended to me back in my omni days. I guess a meatless version of pasta e fagioli would be interesting.

well, after failing to get to the Asian grocer (good thing the employees of one were on vacation and the other closed at 7) , I ended up at Wild Oats and impulse-bought some soy chorizo. I ended up making chili that came out pretty well.

Beans on toast. Next time you accidentally open a can of kidney beans, have beans on toast for lunch. It's real good.

I love to eat kidney beans just by themselves, or mix them with a little dressing. But my favorite recipe that I use them in is stuffed peppers (green peppers baked with a mixture of rice, stewed tomatoes, kidney beans, raisins, onions.... yum!).
