Is soy sauce safe to keep outside of the refridgerator?

My girlfriend thinks it's fine but it says that once its been opened it should be refridgerated.

Most Chinese restaurants would disagree with you. I'd be willing to bet the soy sauce on the tables is out 24/7.

Read the label, mine says refrigeration is recommended. If yours doesn't it probably has preservatives to protect it at room temperature, ick.

Keep in fridge as the bottle says.

In restaurants there is usually a large jug of soy sauce that is used to fill up the small bottles on tables, it's kept in the fridge (or should be if the place is following health codes)

Perhaps it depends on how it is made. My bottle of Kikkoman (fermented) says to refrigerate after opening but my bottle of La Choy (non-fermented) does not. I think refrigeration is recommended more to preserve the flavor than anything else as likely there is enough sodium to prevent baddies from growing.

Is it bad to put soy sauce that has been left out on reheated rice?

I LOLed in the middle of class. Woops? aha.

The Japanese restaurant that I go to regularly brings out the soysauce in a little sauce holder so I have no idea if it's refridgerated or not.

Hahahahaha! I was thinking that as I was reading this thread.

I've always left my soy sauce out and now I'm thinking maybe I should refrigerate it since I also reheat and eat leftover rice that I keep in the fridge for a day or two.

Errrrr ...

What came first ..

1. Large scale production of soy-sauce?

2. The first Chinese refrigerator?

Not sure..our soy sauce usually lasts a year and we keep it opened in the cabinet..i'm alive !

I have a large jug of kikkoman here and it says "refrigerate after opening for quality." I don't refrigerate because it's rather large and I never thought I needed to. It does have a preservative as another poster mentioned. That preservative is "sodium benzoate less than 1/10 of 1 percent." I recently bought a little bottle of kikkoman which has a plastic head with two openings on it. I'll probably put that in the fridge just to keep any bugs or anything from getting into it.

If you want the death to come twice as quick, then it's not bad at all. Unless the bacteria in the one start a war with the bacteria in the other, thus keeping each other at bay and leaving you unscathed and free to live another day.

I've always left mine out of the fridge but it doesn't sit around for long in my kitchen anyway.

I'd always kept my in the cupboard until someone recently pointed out to me that it says refrigerate after opening. So, I try to remember to do that.

This is exactly why I don't like eating food other people cook and prepare in their houses, most home kitchens violate a lot of health codes that restaurants would be shut down for.

You never know who is bringing to the potluck 3 day old rice doused with soy sauce from a jug that's been hanging around the cupboard for a year or 2....gross.

I just checked mine and it's refrigerate after opening for quality.
