Curried lentils with vegetables and soygurt

I just put this together and thought it was such an amazing combination!

1/2 cup french lentils (that keep their shape)
1/2 cup orange lentils (cook down)
Cook in 2 cups water-not sure of time, I kept adding minutes.
Added 1 teaspoon curry and 1 teaspoon tureric towards end of cooking

Cooked diced potatoes and chopped carrots together.
Sauteed onions, red pepper, and celery.

Served with a wedge of lemon squeezed over, and a generous dollop of soy yogurt.

Really good.

That sounds great, I love me some lentils! What do you mean by 'cook down' the lentils? All mashy?

I also find lentils tasty and they really do pair well with spices and vegetables. It is also great to experiment with various foods.

I know that we Brits are a bit fussy about curry and I would only make one tiny suggestiion. That is to caramalize a few onions with evo, add some chopped garlic and than add the curry powder ( good quality and fresh) and fry it under a gentle heat.
The flavours will be enhanced by this method. Add this together with the water at the beginning and not towards the end.

Like how some lentils hold their shape after cooking, and orange ones cook more like a puree?

Thanks Shyvas! That is a good tip for all spices!

I was so happy to have just thrown this together. I actually used 1 1/2 lentils-made a whole potful. I added veg broth to some for soup, and some I'll mash together for patties.
