Eggless Ravioli Dough

I have a homemade ravioli recipe I'd like to try, but it has egg in it. Can anyone recommend an egg substitute or an eggless version, please? Thanks.

I don't know if it would work for pasta dough, but I use 1 T flaxseed meal: 3 T water for each egg called for in all of my baking and it works perfectly. I have also heard the Ener-G is a good egg replacer. If you figure out a good sub, please post your dough recipe!!

You don't need a substitute. Just use a good semolina, water, and some salt. Knead it really well. That's what give pasta its texture; developing the gluten through kneading.

You might want to add some oil in additoin the flour, water, and salt. The egg has fat.

I have made homemade pasta before, it works just as well to leave out the egg and up the oil and water. The only thing different is the taste (pasta with egg tastes...richer? Or something), so I would use a good quality olive oil, to enhance the flavor. Good luck!

Jess, I tried your recipe, and it worked. I haven't actually cooked the ravioli yet, as we're in the midst of a rather busy week. I froze them, as you suggested, and will try them perhaps Friday or Saturday.

Well, I cooked the ravioli, but I probably should've thawed it out first. It didn't turn out well at all. It all froze together, so the ravioli came apart in the pot. I'll just have to give it another try some other time.
