Last night I made the savoury pancakes with coconut sweet potato filling and coriander-tamarind sauce from Vegan with a Vengeance. One of my favourite meals ever

Tonight will probably be a hummus salad sandwich and some fruit. I ate too much cake today!

Smaller green smoothie - 2 cups spinach, 1/2 banana, 1/2 orange, 1/c fortified soy milk. Black beans and rice with collard greens on the side that I sauteed in a bit of coconut oil with garlic and lemon juice.

It was my Mom's birthday today so I cooked a non vegetarian meal for her and my Dad.
Out of what I made for them I ate coleslaw and hashbrown potatoes.
I also pulled some black beans out of the freezer (I buy dry beans and freeze them in portion sizes after cooking them).
I mixed the beans with some homemade salsa, wrapped it in a flour tortilla, and then baked it along side the biscuits I made for my parents.
Oh, and I also had some German chocolate cake that I'd made yesterday.
It was a little heavier of a meal than I would have ate by myself, but it was good.

Half of a large vegan chorizo burrito I got from a new food stand at a local farmers market plus leftover rice and beans and collard greens from last night. And I had dessert tonight of an entire carton of strawberries dipped in some chocolate that I melted and mixed with some soy milk. That was the best part of everything! Ha. The burrito was delicious though and super stoked to get some veganized Mexican food in my city now at the market.

Last night for dinner, I had a fajita taco! Sliced portobella, sliced onion and bell pepper - seasoned with cumin and ancho chili powder, corn and tomato salad, fresh salsa, and spinach leaves.... all wrapped in a whole wheat tortilla! I was tempted to add some feta, but I left it vegan. It was very tasty without it!

Auberine/eggplant sautéed with oranic tomatos sauce with balsamic vinegar, oregano, black Greek olives wit soya pasta. A sprinkle of brewer's yeast and a drizzle of evo.

Enjoying the Michigan weather, I cooked out on the grill for only the third time since going veg last summer.

I made black bean burgers from a recipe on VegWeb and some french fries. The burgers were tasty, but a bit dry. Still, I'm glad to be trying something new...

Today I made spanish rice with brown jasmine rice, corn, tomatoes, onion, garlic, oregano and lots of cumin and chili powder. I wish I had some black beans to add to it. Dangit. I'll have to buy some and add it to the leftovers.

It's similar to making pancakes, actually. There is a batter involved. For mine, I blend about half a block of silken tofu in the food processor, add about a tablespoon each of nutritional yeast and oat bran (could use flour or similar) and a little tumerric, onion powder, garlic, salt and pepper. Then once I start to blend it, I add maybe a tablespoon or two of soymilk, just til the batter is smooth.

You cook it in a pan like you would pancakes. As the moisture cooks off, it starts to set up like a traditional omelet would. You can add whatever filings you like, I made another one this morning with broccoli and Gimme Lean sausage

I'm pretty new to this so my meals currently just consist of a meat substitute like the burgers but reading some of your dinners has inspired me try to make some more interesting things! All sound delicious!

I have leftover roasted butternut squash, so I'm going to have spaghetti with pieces of that and a tomato and mushroom sauce.

Courgettes will get in there too because they are so healthy and nice.
