I figured why not a quick stir-fry to preserve things just a tad longer.... Minced garlic, sliced onion, shredded carrot, strips of orange & red bell pepper, sliced mushrooms, lightly sauteed in olive & sesame oils. Now what to make with it.... could top off some already-made couscous, could toss with already-made pasta, diced tomato & fresh basil... most likely will become a wrap filling with hummus, baby spinach, tomato, and couscous balls!
