Combine all of the ingredients in a food processor and process until desired consistency. Do not blend too long, or it will become like paste. I prefer a crumbly texture, which doesn't take very long to achieve. Hope you enjoy!!!

silva I hated Morningstar crumbles! I do like Tofurky Italian sausage, and Trader Joes soy chorizo

I also use walnuts in a lot of things. One easy and super cheap thing is cook up some red lentils with spices, then add bulgar and chopped walnuts. I use walnuts in pesto too

Poppy "Meat and potatoes" is the least innovative, least flavorful way of eating I know! Thank goodness it's behind you!

What exactly did you not like in the Morningstar Farms meatless crumbles? It's a popular brand, and most people can hardly tell the difference between it and meat. Perhaps you're used to Italian sausage in your tomato sauce? If so, you may want to try Tofurky brand Italian sausage.

It's a perfect replacement for recipes that used to have ground beef as the main ingredient. One of my favorite ways to eat it is on romaine leaves with other goodies served as tacos, or, served as a taco salad. Rock on!!

silva Spudulika--they're from US, I checked another post (Spudlikas from UK). Big difference in products

If you want a cheese sub- I'm in love with Daiya BLOCK cheeses, the cheddar and jalepano havarit. To me they do taste just like dairy cheese, both cold and melted. There are pricier ones that I haven't tried, but I've gotten the Daiya blocks on sale at $3.50, which is fine, cause they're a treat.

I don't exactly batch cook, but I do cook a big pot of beans and plan my week on them, as well as cook some grains and do veg prep. It's easy to do soup, sandwich filling, salads, etc

Spudulika It'll be exciting to see your results, I hope they inspire you.

Some alternative products are better than others; there are so many milks out there that I can't imagine someone not finding one they like. Cheese is another matter - I've only found one I enjoy like I used to enjoy cheese on crackers (but I've finally found it and it's inexpensive and easy to source here in the UK - yay!). I'm still seeking out a mayonnaise that tastes remotely like the real thing it's not like I eat a tonne of the stuff but I like to use it in recipes (it's always in recipes for chickpea 'tuna' salad and artichoke 'crab' cakes). Meat subs are a really mixed bag - I have found wheat/soya-based mince (crumbles) that works for my 'spag bol' and Quorn chunks make a really easy curry. There's no doubt that subs are a great convenience if you just want fast food like hot dogs, sausage and mash or whatever else is your go-to instant after work meal.

What really keeps me on track is making my own 'fast food', the freezer is my saviour. I make up my menu plans in advance and cook in bulk at the weekend. Tubs of chilli or whatever, come out the night before to defrost. It's more time consuming in the short term but very time saving in the long term. If you have some great recipes that you trust, try it. Needless to say it's not worth trying unless you're confident in your recipe!

I've only had 1 instance of "I need to eat this meat NOW" and it was when my husband was grilling a steak. The feeling passed quickly.

I'm in nursing school, doing 12 hour shifts at the hospital. After lunch I feel hydrated and energized; everyone else is ready for a nap. That may be the best part of this journey yet.

Congratulations!! I, for one, am proud of you. Cookbooks from the library (641 area) were a big help to me. Keep going, and best of luck to you on this journey.

Baby steps, right?

I'll preface by saying I'm not overly religious, but this diet originally started by giving something up for Lent that I truly enjoyed. It has gone much deeper; perhaps That was God's plan.

30 days of no meat in a family of meat-and-potatoes people. My husband and kids have been very supportive. (Kids range from 6-12 years old) To be honest, I haven't told many others to avoid confrontation. Im not *there* yet.
