Congrats on the progress, Mrs. Peach! Cheese, especially macaroni and cheese, was a huge sticking point for me on my journey to veganism. I found a wonderful recipe for roasted red pepper vegan macaroni and cheese that was a real breakthrough for me. It's really thick and creamy, and once you get used to making it, it really isn't all that difficult to make. By this point, I have all of the ingredients and measurements memorized. We make it at least a few times a month in my house, usually alongside some steamed collards or kale. It's even better with some cayenne pepper sprinkled on top.

Agree with that!

mason jar are really great meals when you are on the go, especially for those who are working long hours or on the road.

Naturebound Hi Mrs. Peach and welcome!

I use my crockpot to make stews, vegan chili, hot cereal (I love to make steel cut oats in it, or millet with chopped apples and cinnamon), tapioca pudding. It is as easy as throwing some ingredients into the crockpot, turning it on low, and then going to bed. It takes about 7 or 8 hours on a low setting for the crockpot to make hot cereal or a good soup, just enough time to get a good night sleep!

I am very busy also, leaving the house at 6am and returning at 5pm Monday through Friday, and Saturday is hiking/snowshoeing/traveling day I spend with family or vegan meetups etc. So Sunday is my only slow day and I spend about an hour or two preparing food for the week. I might bake a few loaves of bread, or soak and simmer some dried beans, or make some brown rice ahead for a weeknight meal coming up. Sometimes I premake veggie/bean patties or energy bars and freeze them for later. Most vegan energy bars are great eaten right out of the freezer and keep well all day. When I make crockpot stew or soup, it keeps in the refrigerator up to five or six days, and each weekday morning I portion some out, heat it in the microwave, and add it to my little thermos for eating on the go at work. Vegan sandwiches and energy bars can be eaten on the go very easily too, even while driving.

Otherwise, some other easy ideas for eating at work are to bring a little baggie of plain oats, with some raisins or nuts/seeds mixed in there, and some spices and sweetener. Bring along a bowl. When it's time to eat, if there is a coffee pot there with hot water available, or a microwave, heat some water, pour your dry cereal in the bowl, and pour the hot water over it, just enough to cover. Let it soak a minute or two and viola you have a bowl of filling hot cereal. Fresh fruit is always portable and keeps easy. Though I wouldn't recommend peeling a banana while driving lol.

Mrs. Peach Thanks for the tips! I have never been vegetarian.. just skipping straight to vegan. I am doing a slow transition. Still finishing off the regular food already at the house, and not being too picky in public or social gatherings. I am definitely not going to be a purist, but rather simply cutting drastically back on meat and dairy in my diet.

silva Stews and a thermos sound like your best bet! Any beans, lentils, frozen vegetables are fine, use veg broth, or season really well. Add a bag of spinach at the end, stir till it cooks down, maybe add a can of chopped tomatoes
Corn and potato chowder. use white beans, lots of garlic, spinach
Good bet for quick dinner is to cook a big pot of rice, portion into ziplock bags. During the week have with a can of chili beans(like Joan of Arc - ready seasoned)and some veggies on the side
Whole wheat pasta with veggies and a sauce made with peanut butter thinned with just enough water, hot sauce, maybe add a bit of vinegar to taste
Mash a can of chickpeas with a fork, add what ever you use to make egg/tuna/chicken salad. Just Mayo is a vegan mayo you can find at Target or some say the Dollar tree

I'm a bit confused- are you now vegetarian, or just trying to go straight to vegan?

Leaa Your biggest thing will probably have to be making meals in advance! Have you heard of mason jar meals? They're super awesome, and easy. Prepare your meals for the week and store them properly. You can also buy things for sandwiches. Get snacks as well, but healthy snacks. Nuts, fruit, etc.

2016 resolution

Hello, I am brand new to these forums and to veggie diets. I just want to state right off that I am not going vegan. But I am resolving in 2016 to incorporate some veganism into my diet.?
I work 12 hours a day with two jobs. I don't get a lunch break, so I have to eat on the go while driving between jobs. And it's extremely rare for me to actually cook dinner, since I am too exhausted when I get home.
So I am here for ideas, tips and support in figuring out how to make a mostly vegan diet work for me.
