gkleinman Geoff's Vegan Sweet Potato Latkes



2 Large Sweet Potatoes (Yams)

1 Large Sweet Onion (Sweet Onion if you can get it)

1 tsp Baking Powder

3 Tbsp Flour

3 Flax Eggs*

Salt and Pepper to Taste (aprox 1/2 tsp salt)



Using a mandolin or wide cheese grater, great the Sweet Potatoes and Large onion into a bowl.

Add baking powder, flour. flax eggs, salt and pepper and stir/mix very well. Cover a pan with a thin layer of oil. Form 'cookie' size pancakes and fry them up.



Makes 15 Latkes



Flax Eggs (from How it All Vegan)

1/3 Cup of Whole Flax Seeds

1 Cup of Water



In a food processor or blender, grind the flax seeds until they are a fine flax meal. Slowly add the water until the mixture has a thick milk shake like consistency. 3 Tbsp = 1 Egg. Mix makes a total of 6 egg equivalents. Keeps 3-6 days in fridge.



Tofu Sour Cream



1 12.3 oz package of Extra Firm Silken Tofu

1/4 tsp Salt

4 Tbsp Lemon

1/2 tsp Rice Vinegar



Combine all ingredients in a blender and blend until smooth. Refrigerate. Keeps for 1 wk. Add extra lemon juice and/or vinegar to taste.

monkeyandbunny Here's an easy one, I maybe back to edit because I'm doing this from memory. BTW. I love your website!





Crockpot Red Lentil Soup



1.5 cups of red lentils

1 medium sweet potato peeled and quartered

2 carrots peeled and chopped roughly

2 cloves of garlic

1/2 cup of chopped white onion

4 cups of vegetable stock (or unchicken broth)

2 t of cumin

1 t of ground coriander

2 t of ground ginger

1 t (more if you're feelin' sassy) of red pepper flakes



1 Add all ingrediants to the crockpot cook on High for 6-8 hours

2.After the soup finishes cooking, ladle into a blender and puree until smooth. Serve piping hot with crusty whole wheat bread. Pass tabasco and soy sour cream for topping.



***Optional***

3. If you desire a chunky texture either mash the finished soup with a potato masher or puree a small portion and add it back to the crockpot. Stir until thickened.

avocado73 Hi, I am featuring Winter recipes on my website www.theppk.com and would love some great vegan winter recipes. It would be good if they are original and not reprinted from else where, but "modified from somewhere else" is OK, too. Especially wanted are vegan Hannukah recipes. I am trying to perfect the vegan latke but haven't been able to. I might even make the recipe on my public access tv show if it's amazing.
