I recently picked up the Fix-It and Forget-It Vegetarian Cookbook by (compiled by) Phyllis Pellman Good. I think some of the slow-cooker stuff might be right up your alley.... break out the crock pot, throw in a bunch of fresh veggies & canned stuff, and just let it go!
I adore cooking, I do it every single day.... and I stay away from all pre-packaged meals & preservative/sodium-laden crapola. Only the good stuff! =) If you have any questions or just want a few ideas, I'd be more than happy to help you in any way I can.
