Zucchini brownies
Category: Desserts - Other

This recipe is suitable for a: vegetarian diet


Preparation Time: 30 minutes
Serves: 24


Ingredients:

1/2 cup vegetable oil
1 1/2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 cups shredded zucchini
1/2 cup chopped walnuts


Instructions:

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan. In a large bowl, mix together the oil, sugar and 2 teaspoons vanilla until well blended. Combine the flour, 1/2 cup cocoa, baking soda and salt; stir into the sugar mixture. Fold in the zucchini and walnuts. Spread evenly into the prepared pan. Bake for 25 to 30 minutes in the preheated oven, until brownies spring back when gently touched.

These are really good. The zucchini makes the brownies very moist and delicious!
The batter will not be dry after you add the Zucchini.
Serve with icing if you'd like!

I just made these for work - they are SO yummy - but crumbly

I would suggest beating the top down into the pan right before you put them in the oven.

just made them today with coconut oil and topped with coconut flakes - DELISH!!! look how pretty they turned out too!

wow! you know, the name makes it sound yucky. but looking at this pic, yum yum yum!

I made these last night and they are really good! You can't even tell there is zucchini in there. Really moist. More like a dense chocolate cake than brownies, but in a good way. I never liked "cake like" brownies from the box - these are not like that, they are better :)

No walnuts for me though.

My coworkers thought they were awesome too!

I will definitely be making these again.

I bet it would work with eggplant too. I always make "zucchini bread" or cake with eggplant, works great.

ETA: It took more like 45 minutes for them to cook though.

I have seen brownie recipes that use mashed black beans. Work some of those into this recipe and I bet they would really be fabulous.

Zucchini is always surprisingly good in baked goods. :lick: A local coffee shop around here has been selling vegan zucchini and raisin scones lately... Oh, they are soo yum!
