This cheese came about via a collaboration between Tal Ronnen, Stanford Molecular Biologist Pat Brown, and French cheese maker Jean Prevot, The cheese is made from natural nut-milk curds and undergoes a primary fermentation followed by coating with mold. In other words, this is a genuine cheese made according the traditional french methods. Out of the box it is a little bland and less fatty than traditional french camembert. Nevertheless, after a week or so of aging in a cool dry place it develops genuine tang. The white mold skin is delicious and authentic (at least to the best of my recollection). It's pointless to even attempt to compare this to any other mass-produced vegan cheese product. This is not fake cheese, this is authentic french-style vegan cheese. Currently it can only be purchased from the cheese mongers area of select whole foods.
