B = coconut milk and strawbery cluster cereal (felt like being 'naughty' today )

 

L = butternut squash tagine with rice (almonds, raisins, chickpeas, corn, garlic, onions) YUM!

 

D = veggie lasagna and french fries with VEGAN red wine!  Burp!  :)

B 10 banana raspberry cinnamon flax seed smoothie
S 1 dry cup steel cut oats, 1/2 cup raisin, 3 sweet potato, 4 carrot bowl
L 1 head romaine, 3 tbs tahini, Bragg, mustard salad, 2 hash browns
S 6 Brazil nuts
D black bean, black rice, hummus, adobo sauce mixed together. I wasn't aware of amount, I shovel out however much I can stomach.

Breakfast:

-One blackberry and one strawberry-banana muffin (standard size, not big ones), both homemade and both oil-free, whole wheat, no added sugar.  :)

 

Lunch:

-Mixed baby lettuce salad with cherry tomatoes and shredded carrot.

-Glass of cranberry juice.

 

Snack:

-Half an avocado, salted.

 

Dinner:

-Vegan lasagna with layers of sliced mushrooms, tofu ricotta, sliced zucchini, fresh spinach leaves, and organic Classico sauce.  Topped with some nutritional yeast and some sliced black olives.  Just about my absolute favorite thing to make, really.

Last night's dinner:

  • Chocolate tahini on a slice of tiger loaf, sprinkled with a pinch of sesame seeds.
  • Fussilli pasta with brocoli, kale and cashews, sprinkled with nutritional yeast (had it again this morning yet with sauteed onions and vegan pesto, without cashews nor nutritional yeast).
  • Yogi Tea's ginger, orange and vanilla tea

 

For lunch today I'm going to have baked beans and another slice of tiger loaf with Pure spread, and a super smoothie.

Yup, an' it's 'lish'!

 

For one slice of bread, I start of with 2 tsp tahini for the base, then add 1 tsp cocoa powder and 1/2 tsp plain sugar (adjust to taste), and 1/2 a teaspoon of either maple syrup or brown rice syrup and mix it together. 1 tsp of good quality premixed chocolate powder (like Morrison's or Waitrose's) works just as well as mixing the cocoa powder and sugar from scratch.

Late B:  Spinach salad; kidney beans, cucumber, mushrooms, cherry tomatoes, grated carrot & tofu pieces

This was my first time making thousand island dressing, it was really good!

L:  Some cereal with soy yogurt & a banana

D: ?

Breakfast: Smoothie with 1/2 papaya, a handful of strawberries, a banana, a splash of vanilla hemp milk, and a base of coconut water

Snack: Pita chips and Tuscan herb hummus

Lunch: Whole wheat spaghetti with Boca crumble-tomato sauce

Snack- Whole wheat toast with mixed berry jam

 

Haven't had dinner yet, but might just have leftover mashed potatoes and vegan gravy and broccoli, then figure out something to do with some tofu....

Made my own ramen: portobello dices mushrooms, spinach, some frozen corn and wheat noodles (found the right sort for ramen) simmered in a mushroom broth. My kid said he prefers my ramen to the real thing :D

 

Dinner planned: tofu and potato miso stew on buttercup purée. spiced beetroot and chocolate cake.
