Hi! The less processed food is the more it appeals to me, I love muesli, either pre prepared or its so easy to chuck some together at home then at least you know whats in it, and you can optimize your nutrition by adding things that are more nutritious like sunflower seeds, dried apricots(look for black apricots, tastier and without the chemicals), raisins,nuts,etc,etc, a great and tasty way to boost iron and protein first thing in the day. You can eat it with your favourite soy milk. Also its worth looking into different grains I read recently that tritcale has a higher protien content than other grains so could be a useful addition to your muesli mix-I havn`t tried it yet.
When I was backpacking in the UK I was operating on a shoestring, and started my day with porridge, cooked very simply with water and salt. I developed quite a taste for it and to this day would not eat it any other way, filling,warming,mmmm!
Can`t help with the boxes of cereals, sounds daunting, My kids get so annoyed at me because I`m always reading labels on processed foods am rarely impressed and usually make them put it back, most of it I`d consider snack food not a staple/energy/healthful option, I guess you just have to start reading (a different one each day? you`ll be done in a month?)until you wittle it down to any that suits you.
