The only book I can think of is "Green is the new red", but that's more about activism than anything else.
I think Howard Lyman has a book that talks about the environment and veganism.
The other thing you could do, is see if anyone who worked on the 'Cowspiracy' doco have any books. I'm assuming a lot of them would be environmentally minded, so they might have written something that would fit what you need.
