Breakfast: banana, daiya black cherry yogurt, mandarins orange.
Snack: Thai chili pretzel from a local coffee shop.
Lunch: pad thai pasta salad
snack: 2 pears, 2 peaches, some cashews and walnuts.
Dinner: pan fried chayote squash with garlic and peanuts, with brown rice and dried cranberries.

I hadn't heard of chayote squash before, that sounds good! There are so many types of squash and I think I've only tried two of them.

What rewards were you expecting? I never experienced any rewards; I just like to have a clean conscience that I'm not eating animals. But honestly, not going to lie and say that I feel any more physically amazing on a vegan diet than I did when I ate meat. I feel about the same physically.

A lot of vegan recipes do ask for ingredients that are difficult to find, but if you can't find those foods, eat something else. Plenty of plant-based choices in most regular stores. At least in north America, most of them will carry vegan burgers and tofu as well.

Oats and cut up peaches with almond milk. Coffee

Spring mix greens with walnuts, dried cranberries, green olives, tomatoes and balsamic vinegrette. Iced hibiscus and rosehip tea

watermelon

and as I staggered home I poured tortilla chips on a plate, topped with Trader Joes soy chorizo and slices of Daiya block cheddar, melty in the micro. Very satisfying!

I do batch cooking at the weekend for our freezer, that makes weekday meals so much easier to pull together after work.

This is my blog, it contains recipes for meals that I routinely cook and eat all the time (and frequently mentioned on this thread). They're mostly dead simple in terms of ingredients:

I hadn't heard of it either. I also got a long squash, fuzzy squash and something called dasheen from the store today. Never heard of any of them before. I love finding new produce.

Snacks: highbush cranberries and cherries. Pretzels with peanut butter.
Lunch: Daiya black cherry yogurt with sliced bananas, granola, and strawberries.
Snack: dried cranberries, dried mango, almonds, cashews.
Dinner: some kind of pasta dish using long squash, fuzzy squash, zucchini and chickpeas.

Breakfast: a simple but good muesli, made with quick-cooking rolled oats (uncooked) and some of my own homegrown peaches (they're small, but quite good).

Lunch was white rice, fresh broccoli, and canned garbanzo beans.

Dinner tonight: ?

I normally have water to drink.

Homemade black bean and walnut burger on whole wheat toast with a little Just Mayo, some thick slices of heirloom tomatoes, and avocado. Also had some leftover pasta salad.

Silk Blueberry yogurt

Dinner was corn on the cob and broccoli with cheese sauce (soy milk and daiya mozzarella shreds), with a little tofu crumbled into it, and more tomatoes (I have a big garden).

The chef at our work cafeteria has been accommodating in terms of making me vegan recipes.

Breakfast: Vegan breakfast burrito at work: pinto beans, potatoes, and mixed veggies in a tortilla wrap

Lunch: Two vegan tamales made without any lard or fats (nearby store that sells these)

Dinner: Bowl of steel cut oatmeal mixed with pumpkin flax cereal (Nature's Best) and blackberries, in unsweetened almond milk, and one whole papaya

Snack: Some rice crackers and candies

L - chilli and sage butternut squash soup with toasted wholewheat croutons

D - fajitas: wholewheat wraps stuffed with refried beans, Mexican spiced vegetables (onions, mixed peppers, mushrooms), salsa and shredded lettuce with lime.

P - orange juice ice lolly

Nice relaxed Sunday of cooking and eating.

Bit of an odd day for me. I was craving chocolate and cake, so ate lots of cereal and yogurt instead. It worked at least, no more cravings for chocolate and cake!

Can't remember exactly what I ate yesterday, another odd one. I do know I had cereal for breakfast, then hummus and pittas plus veggies for lunch. Early evening I stuffed down a *whole pack* of banana malt loaf plus two creamy coconut lemon yogurts after the shopping arrived, plus I had a quite a large plate full of vegan cheese and crackers late evening for supper!

Today a little more sensible, but blooming yumshous!

B - Fruit & Fibre Cereal with Soy Milk
L - Chilli Spiced Butternut Squash Soup with Toasted Wholewheat Bread
D - Pineapple Sweet & Sour Stir Fried Veggies with Baked Tofu over Brown Rice (Woof - super good, my new favourite recipe)

B - Dashed down a bowl of fruit and fibre cereal with soya milk for brekky - end of the box so it was a bit crumby and uninspiring.

L - For lunch I had spicy butternut squash soup (recipe HERE) with toasted croutons. I made a batch earlier in the week and just decant a mugful from the fridge, into a screw top jar to heat in the microwave at work.

D - Bit cloudy and dank here today so I fancied comfort food tonight. I have lentil and potato stew (recipe HERE) on the go.

S - Slice of wholemeal bread with sunflower butter and blueberry spread

B - smoothie with 3 bananas, frozen raspberries, kale, hemp powder, and turmeric. I also finished my sons pb sandwich with blended raspberries and dates for the "jelly".

L - small bowl of chili and a vegi sandwich

D - sweet potato with refined beans, an apple, and a banana

Lunch was slice of cheeseless pizza (basically bread) with some tortilla chips.

Dinner was brown rice with red lentils. I think I put too much tumeric in the lentils and it gave it an unpleasant bitter taste. Next time Ill leave it out I think.

Snack was pita and sweet potato chips and a small bowl of whole grains granola in almond milk.

Yeah, turmeric isn't a great flavour at all IMO. I use it mainly for colouring dishes (curries and rice mainly) that nice golden colour, and it makes a useful substitute for saffron. Plus it is really healthy for you, so there is that. But no to the flavour.

WOOT! Went to VegFest yesterday. I have been successful at not eating any processed oils for the last month so I felt like I could splurge at VegFest.

how do I eat corn on the cob without butter....

My honey was away for the weekend and came back with a dozen corn on the cob, the first we've bought since going WFPBed almost a year ago. He ate his with just salt and pepper and my butter substitute was a drizzle of tahini with salt and pepper. It was delicious! Corn chowder will be made with some of it too.



I don't think I had a whole tablespoon of tahini however the comparison is 8 grams of fat in tahini vs 12 grams of fat in butter so it is nice to know that I was not only being kind to cows I was being healthy as well.

Had breakfast burrito from work with beans, potatoes, and veggies. Felt like garbage after eating it and the food just sat in my stomach which was kind of odd. Stomach felt bad most of the day. I suspect the person cooking it used some sort of butter to fry it up, and since I avoid dairy, I think my body just had a bad reaction to it. So no more of these burritos for me.

For lunch I had a plate of salad, greens with tomatoes, cucumbers, corn, flax seeds, and a dollop of hummus.

For dinner had some lentils with green beans, sweet potatoes, and some chickn nuggets. Plant protein shake to wash it all down.

I finally made it to Whole Foods and bought Gardenia Meatless Burgers, Dried Goji Berries, Chao Cheese etc. I wanted to attend a vegan feast on Randall island but there was no one to go with. The day turned out to be fun anyway.
