Ok I have seen this thread a little late, but I can still contribute. I will post my Lunch Time Treats for this week.
Monday: Shredded vegetables - cabbage, carrots, lettuce & tomatoes, Tofu with sweet peppers and onions, steamed callaloo & veggie chunks with ackee and string beans.
------------------------------------------ Tuesday: Shredded Veggies again, ackee with onions and scallion, Peas stew with broccoli and carrots and tofu with onions and pepper.
------------------------------------------ Wednesday: Steamed Callaloo, Curried Chick Peas, Tomatoes & Cucumbers with Ackee and Veg
Thursday: Shredded Veggies this time with Cucumbers, Curried BroadBeans, Ackee Tofu Onions & Pepper, and Steamed Callaloo
My Lunchtime Treats for this week. I will post my breakfast and dinner treats as I prepare them.

Especially the... um... can we call it 'rule?' about including pics?
Some threads just feel like bragging.
But pictures change it from bragging to an actual work of art!!! (with some bragging, but at least the pics make the bragging fun... or is that just me?)

I don't know about you guys, but I like my Vegan cuisine with lots of spices. My dishes always spark with a spicy zing. There is a perception that Vegan food is boring and bland, well the dishes I prepare are so far from that flawed perception.

I find that if I eat a bland meal (especially for dinner), I'm just not satisfied and I wind up looking for a snack later. If it's well seasoned and flavorful, I'm content.
By the way Cultus, I've really enjoyed seeing your meals. I'd never heard of callaloo or ackee and I don't think I've ever prepared broadbeans. That's one of the reasons I love seeing the pictures! Thanks for sharing.

That's one of the Joys of being Vegan in the Caribbean. There are a plethora of plants, fruits, seasonings, herbs etc at your disposal. I mean there is never a Dull moment. I'm going to show you what we Caribbean Vegans enjoy. It's totally amazing. What makes it even more intriguing is when you merge the different cultures here and adopt their cuisine creating the Vegan version. The spices make your palate go into a frenzy.
Breakfast This Morning - Vegan Pizza (RAW) nothing is cooked. Absolutely Tasty. This contains too many veggies and seasoning to remember. The Crust is made from a variety of seeds
My Drink - Beetroot Juice plus Pineapple Juice
I didn't make these though. I get foods & juice like this from a Raw Food Restaurant where I live.
Lunch - Raw Vegan Burger I had this with passion fruit juice
I'm presently between Jamaica, The Bahamas and Barbados. What you are seeing now are from Jamaica. The same kind of foods span the entire Caribbean, but the seasonings and preparation style is the major difference. Jamaicans have a Spicy palate, the same applies to the Bahamians. The Bajans however have a milder almost blandish palate. The Trinis also love spicy foods. I have traveled throughout most of the Caribbean so I get to enjoy the carious styles of Vegan food preparation.
Dinner Last Night
I got this from a popular grill restaurant Island Grill "Veggie Stew Peas with Shredded Veggies & Plantains" With some Aloe Vera Drink.
Breakfast Just a while ago... Pineapples, Jack Fruit and Sugar Canes....Delish
With my morning dose of Ultra Mangosteen, My Vegan MultiVitamin & 16 fl oz of Bottled Water
I didn't start yesterday, because I was halfway through my lunch before I remembered I wanted to take a picture. Not that it matters... I always eat the exact same thing five days in a row. I prepare all of my workweek foods in advance so I can just relax in the evenings.
BREAKFAST:
5am
A banana, a handful of dates, and soymilk with Nesquik stirred in. It looks like a lot of pills, but its mostly my natural green vitamins, which call for 6 pill dosages. Attachment 15595

7am
I've just arrived at work. I pre-make these oatmeal bowls, too. Most of the good stuff is in the bottom. I just add water at work, and microwave for a minute. It's just regular Kroger brand rolled oats with a bunch of raisins, cinnamon, walnuts, sugar, salt, and a few tablespoons of flaxseeds. Right... Plus another banana. Attachment 15596

LUNCH:
12:30pm I take lunch very seriously. Normally, all of this would be on one big plate, but I was out of my larger plates, so I was forced to use my oatmeal bowls. Bowl1=Fried onions and baked beans... Bowl2=Brussel Sprouts and Carrots that had been simmered in veggie broth. Plate: A fake soy drumstick and fake chicken strips I got from a local vegan cafe. Plus, curried chickpeas, cabbage, and rice. Attachment 15597

DINNER:
6pm
Dinner is my least serious meal of the day. I usually just skip it, but cantaloupes were on sale for $1 each. If I do feel a bit hungry, I'll normally have something extremely light. My slicing was a bit clumsy...possibly explainable by the fact that the beer bottles are empty. Attachment 15598
My Dinner - Veggie Stew Peas with Shredded Veggies & Plantains (ripe and green). I just here munching on some sugar cane now. It's my guilty pleasure. I do have a natural sweet tooth.
Breakfast: Cinnamon Raisin Baked Oatmeal and Unsweetened Almond Milk (pineapple not shown)
Dinner: Homemade BBQ Ribz, Kale, Black-Eyed Peas, and 1/2 of the Sweet Potato
Supper: Big Salad with Dill weed, Dijon, and Balsamic Vinegar
Carbs: 201 g (55.7%)
Fat: 33 g (20.7%)
Protein: 85 g (23.6%)
