Cool Vegetarian Meal Prep

Hi everyone!
I was a vegetarian for 4 years. During this time, I developed an unhealthy diet, gained some weight and became slightly anemic. I started eating meat about 3 years ago, but now I'm ready to commit to being a vegetarian again. My goal is to make healthier choices and to make sure I'm getting enough protein. Does anyone have any "meal prep" ideas? I like to cook and prepare my lunches for the work week on Sundays. Any advice is appreciated.

Yep, I keep a blog. I use it to record the recipes I use all the time, mainly for my own reference but others have used them. They're mostly whole-food, mostly vegan, mostly inexpensive and mostly low in fat. Also lots of stuff I cook is big batch style, suitable for the fridge or freezer. Not the prettiest pictures, and no guarantees, but I do try to ensure that the recipes I post are foolproof in case anyone else wants to use them.
