Cool New vego meal plan

Hi all - I am a new vego making the transition. We have changed overnight from a meat heavy diet to eating only eggs and dairy. This is feeding 2 teenagers and a bloke who loved his steak and so far everyone is enjoying the food and we are all happy. Someone suggested I post my recipes but as I am new I will post a meal plan and if anyone wants to know more I can try and do recipes too.
  • Homemade mac and cheese with baby tomatoes and salad
  • Angel hair pasta with rocket, basil, roasted tomatoes, lemon, garlic, chilli, olives and feta
  • Indonesia fried rice with beans and a fried egg
  • wraps with felafel, Lebanese pickles, tabbouleh, garlic sauce and hummus
  • olive, artichoke and feta tart with asparagus salad
  • baked potato filled with homemade mexican bean chilli, avocado and corn salsa, lime, coriander, cheese and sour cream
  • indian madras vegetable and chickpea curry with yoghurt and naan bread
  • lentil "bolognaise" with pasta, basil and Parmesan
  • tofu and vegetable laksa
  • bean chilli burritos with salad, cheese, sour cream and homemade salsa
  • vege pizzas
  • eggplant snchitzel with salad
  • italian ribbolatta soup
I hope this inspires you new vegos

Thanks for posting. Im down for a veg pizza but most places dont carry vegan cheese and i have to have cheese on my pizza. Ive found one restusrsnt that does have vegan option but otherwise i dont get pizza. How do you make it?

Hi Toriann, are you in the US? There are a few good frozen vegan pizzas here, some with Daiya cheeze and some with no cheese substitute. Amy's No Cheese pizza is delicious, but of course not cheap. I find it at Winn Dixie and Whole Foods. Some restaurants (Mellow Mushroom is one) have Daiya cheese and make fantastic vegan pizzas.

Grocery stores often sell raw pizza dough or precooked empty pizza crusts, some are vegan. You can use hummus, or guacamole, or artichoke heart pesto, or tomato sauce, or whatever you like as a base, and use veggies cut up tiny or thin. Pineapple is good on there too! There are recipes online, you can put lots of yummy things on a pizza crust!

I don't miss really good pizza, I miss the really cheap, make a phone call and pick it up pizza. I like a base of carmelized onions with olive oil and a little pizza sauce. Loads of mushrooms, green and black olives, roasted red peppers, maybe spinach. I haven't found a cheze worthy of pizza (at least not in my price range!)
A little Daiya is good if it's just a pizza sauce/ mushroom pizza.

Fat free refried beans, salsa, Beyond Meat fiesty or Trader Joes soy chorizo, onions peppers, and some Daiya pepper jack. After it comes out topped with chopped lettuce and tomatoes and black olives

I love that plan really. It is now much harder to create your menu, as it seems that there are not so many variants, however you gave more ideas on it and I will do my best
