Perfect vegan cream soup

This is so very versatile, and easy

Head of fresh cauliflower chopped (or frozen I quess?)
garlic- I used 6 cloves
1/2 cup of raw cashews
just enough water to cover
boil till completely soft then blend with immersion blender or regular blender

This makes a thick, creamy soup that is perfect for taking on whatever additions you'd like. I added Better than Boullion No chicken base, and black pepper for what was better than cream of chik;n soup.
Sauteed diced mushrooms
Carmelized onions
Curry
Herbs
You name it's good. Perfect as a sauce, for rissoto, for casseroles

I just made this a few nights ago and poured it over rutabagas and green beans. I also added Better than Boullion no chicken base. I used blanched almonds in place of cashews (intolerance to cashews). Very good! I highly recommend this also! Glad you shared it here. Cauliflower is amazing as a sauce. Who would have ever thought? This is one more reason I love being vegan. The creativity and ingenuity of making such great recipes with such simple ingredients!

Does the basic cauliflower + cashew base have a neutral flavor? It looks like it would make everything taste like cream of cauliflower.

Surprising no! I used a good amount of garlic, and black pepper and the cauliflower was not very strong. I added a bit of the Better then Boullion no chicken to my bowl and that was really good. If you used more herbs or stronger spices it would really be masked.
I made this in my Soyajoy soy milk maker BTW.

I think if you added some tomatoes it would be a good tomato bisque

I'm going to add some nutritional yeast to a bowl right now.

ehh... the nut yeast made it taste like nut yeast, and it took a lot to do that.
I'm sure others will say it tastes just like cheese....

Actually it does taste like cauliflower by itself but it gets masked easy.
