Lemongrass and Coconut Milk Soup - VeggieBoards

Ingredients -
10 cups water
5 stalks fresh lemongrass
1 pint mushroom cut into quarters
1 Lg onion sliced
4 slices fresh ginger aprox thickness of a quarter
4 vegan bullion cubes
1 tsp salt
1/4 tsp black pepper
1 tsp red chilli seeds
1/2 pint red cherry tomatoes cut in half
1 cup broccoli florets
2 cups cooked rice noodles (optional)
1 can lite coconut milk
Put all except - broccoli, coconut milk, noodles into a pot. Bring to boil. Turn to a hearty simmer and cook 30 min.
Add the broccoli, milk, noodles and heat through about 10 min and serve in pretty bowls. Enjoy the flavor explosion my new friends. ( remove lemongrass & ginger chunks when serving )

Yumm! I love those combinations!

For me, I'll use more ginger and leave it in, and add coriander and cardomon and more heat!

I really need to get more coconut milk
