Vegan Cauliflower Cheese

I made up this cauliflower cheese recipe the other day, and was pretty chuffed with myself because it tastes exactly like the cauliflower cheese I remember eating when I was a kid! Winner

Cauliflower isn't my most favorite vegetable, although pretty much everything else in the cabbage family is (except for kohlrabi, which is also just okay), but I eat it now and then. I think this dish would change my opinion of it. I was wondering if the texture would be even better if the cauliflower was mashed instead of sliced.

I love mashed cauliflower. It is good also with 1/2 mashed potatoes, 1/2 mashed cauliflower.

^^^ That reminds me of a "Calvin and Hobbes" cartoon I still remember...

Calvin: (making disgusted faces) "GAGGHHHH!! Ugghhhh. ICCCKKK! What is that disgusting smell? WHatever it is, I'm NOT EATING IT!!!"
Calvin's mother, at the stove, with a nonchalant expression: "Stewed monkey heads. They'll be soggy enough to eat in about an hour."
Calvin, perking up and looking intrigued for a couple of panels: "Hey, I wonder... would Mom really cook something like that? Nah, must be kidding... But maybe...?"
Final panel: Calvin: "Is this a nose? Oh, I think I found the tongue... but where are the teeth?..." Calvin's Dad: "What is this??? I thought we were having stuffed peppers! Whatever it is, I'm not eating it!!!" (Calvin's Mom just puts her face in her palm, giving up)
