I saw picture of this on Tumblr and decided to make it, i can now say it is my absolute favorite sandwich.
This recipe is vegetarian because of the mayo and butter, but can easily be altered to fit a vegan diet.
2 pieces of rye toast (or whatever you prefer)
3-4 yellow onions
a few tbsp of butter
1 tbsp brown sugar
Slice the onions thin and throw them in a frying pan with about 2 tbsp of butter and 1 tbsp of brown sugar, allow them to caramelize over a medium-low heat, usually about 30 minutes. Once the onions are finished, take two pieces of rye toast and smear with mayo and dijon mustard. Top with lettuce, tomato, avocado and caramelized onions, salt and pepper if desired, and enjoy : )
