This burger is SO MUCH TASTIER than the ones I've bought in the store! The eggs in it can be subbed out with egg substitute if you're vegan (they mostly act as a binder for the patties), but it's so worth it to make these at home. I got the recipe from Veggie Burgers Every Which Way and it was a hit with the omnivorous couple who live upstairs with us as well as Steve and I. I ended up having to make a second batch to keep in the fridge for when we don't feel like cooking! They freeze pretty well too.

I often use aioli and tomato, though it tastes good with a wide range of veggies on it. I once topped it with mustard greens! It's all up to personal tastes.
