Not sure you can really even consider it a recipe. I sort of made this up one day when I was invited to a BBQ and suddenly realized I had nothing to bring. I'm making it again tonight for a work function tomorrow, and thought I'd share.
Cooked quinoa (I'm starting with 2 cups of dry tonight since cooking for others)
Oven-roasted chickpeas (220 degrees with a little olive oil, S&P, until they are browning and cracking open)
Black beans (drained and rinsed)
Tomatoes, fresh or canned. Tonight I have Ro-Tel, so that's what's going in.
Salt, pepper, cayenne, coriander, sometimes I add curry.....whatever your favorite spices!
I throw it all together in a big bowl and mix it up. It's great hot or cold, and chances are you've got everything to combine in your pantry right now.
