This is a simple recipe, and very quick to make if you already have some rice made.
Spicy Chorizo Rice
2 cups cooked rice
1 medium onion, diced
1 clove garlic, minced
½ pckg Soy Chorizo (6 oz)
½ bunch cilantro leaves, chopped
1 – 2 tablespoons olive oil
¼ - ½ lime
Pour enough olive oil in skillet to sauté onion
Dice onion and sauté in non-stick skillet on medium-low heat for 10 minutes
Mince garlic and add to onion
Add chorizo to onion mixture and cook for 2 minutes
Add rice, blend well, and cook for 5 minutes
Chop cilantro, and add to mixture
Squeeze juice from lime into mixture and blend well
Add salt to taste
This'd be good with barley used instead of the rice, I think. It sounds good with rice too, I'm just on a barley kick.
