hey guys, been making a lot of sushi lately (lots more recipes to follow!). I've been experimenting with slightly different fillings, this has been one of my favourites! Don't be put off if you don't like wasabi - there is a scale depending on how much you like wasabi!

Agreed!

 

The eggplant idea reminds me of some sushi I had while staying at a veg*n resort in Costa Rica. The owners were originally from Israel, so they offered both traditional sushi filling and a Mediterranean style which, among other things I can't readily recall, included a marinated eggplant sushi. It was delightful beyond words.

I love, love, love sushi! Especially avocado maki; aubergine is fab too so I'll definitely be giving this a bash.

OMG! That looks sooo delicious. How do you cut your sushi rolls? I always have problem with cutting sushi. That looks sooo soo good. But I'll never able to get perfect sushi pieces like that. Gotta try this recipe
