It's phenomenal. This was the second time I made it, and I didn't have shallots so I just used yellow onion. It was delicious! I'm a horrible cook, too, but it's an easy enough recipe that I could do it without asking my (much more talented) husband for help.
It tastes like some glorious combination of mac 'n' cheese and fettuccine alfredo, and the roasted cherry tomatoes add a deliciously sweet taste.
