I soak and cook a bag of red beans, then strain. I fry up some finely diced onions, peppers and garlic and add a bunch of spices (cumin and chilli are good) and salt. I boil up some sweetcorn and drain. Then I mash it all together. I add enough oats to get a nice pliable dough (not too wet or sticky). Use a 1/3 US cup to scoop up handfuls, then shape them into patties. Dip in flour, then a chickpea egg (1/4 cup chickpea flour with 1/4 cup water) and lastly some finely crushed tortilla chips. Then chill or freeze. I like to pan fry them.
