Vegan Spice Mix Masterpost

So I've been at it again on my blog with Daiya reviews and a few other interesting things, and I decided that it's high time I put up a masterpost of some of my favorite spice mixes. I have recipes for 3 different kinds of thai curry paste, 3 Indian spice mixes, and 5 different "general use" spice mixes all here. Let me know if you find any of them useful!

Doesn't toasting and grinding grinding spices release their oils to be absorbed by food, and render them less potent if stored?

I had a big bottle of Old Bay that I'd used for a few years and never guessed it had ginger or cinnamon!
