Cool Gluten Free Brownie-Chocolate Chip Cookie Bars

(Hehehehehe--This will show how truly evil I am)

For the brownies:
1 pkg Bob's Red Mill GF brownie mix
1 flax seed egg
1/4 cup melted Earth Balance (soy free) vegan margarine
1/4 cup water
1 tsp vanilla (or another extract, such as lemon, almond, mint, etc)

For the chocolate chip cookies
2 cups GF flour (I use Pamela's)
2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
3/4 cup chocolate chips (I used a hammer on a dark chocolate bar)
3/4 raw sugar
1/2 cup canola oil or Earth Balance (soy free) margarine
1 tsp vanilla extract
1/2 cup milk (I used hemp milk)

Preheat the oven to 350 F (180C, Gas Mark 4). Mix the brownie mix and bake it half way (about 10 min). While the brownies are baking, start mixing the cookie dough by creaming the EB and the sugar together until fluffy in 1 bowl. In another, sift the flour, baking powder, and salt. Slowly add the flour mixture to the sugar/margarine mixture. Mix well, and add vanilla (or another extract) and chocolate chips. Add the milk to the mixture until smooth and creamy. Take the brownies out, and spread chocolate chip cookie batter on top, and bake for another 10 minutes. Let them cool, then top with vegan chocolate ganache.

Oh my, that sounds delicious! I am so stealing this recipe! They seem made for me! I'm gluten free, vegan, and have been trying to find gluten free/vegan sweets!

That looks sooo good!! Thank you for posting.

How about this Gluten-free flour-less chocolate cake (sorry vegans):
Ingredients:
3/4 cup coconut oil
1/4 cup whipping cream or half and half
8 ounces bittersweet chocolate
chopped 5 large eggs
1/4 cup unsweetened cocoa powder
plus more for the pan
3/4 cup coconut sugar Raspberries

Steps
1) Heat oven to 350° F. Butter a 9-inch springform pan and dust with cocoa powder.
2) In a medium saucepan, heat the coconut oil with the cream over medium-low heat until melted. Add the chopped chocolate and stir continuously until melted and smooth; remove from heat and set aside.
3) In a medium bowl, whisk together the eggs, coconut sugar, and cocoa powder until smooth; whisk in the chocolate mixture.
4) Transfer the batter to the prepared pan and bake until puffed and set, 35 to 40 minutes. (About 15 minute into baking, place the raspberries on the cake and push in slightly.)
5) Let cool in the pan for 1 hour. Run a knife around the edge of the cake before unfolding.

Mm, I made them and they taste good! Very rich though. Even my non-vegan family members liked it!

Two of my most favorite junk (that is, not-so-healthy-for-me) foods... combined. Like Darth Vader and Voldemort joining forces.

E.T.A.: I just re-read the recipe... I dunno about cinnamon in chocolate chip cookies. I love the stuff- I just haven't had it in those.

I got it from this recipe.Not that I'm completely evil or anything. Just don't look in the Food Porn section, or you will have to burn your, I mean my, I meant, our eyes out together. I'm going to have to use that quote sometime.
