Vegan French Breakfast Muffins - VeggieBoards

Used a non-veg recipe and veganized it, which was nice since I had everything already. These turned out spectacular!

1/3 c. butter melted (I used Earth Balance)
1/2 c. sugar
"1 egg"---I used 1/4 c. unsweetened applesauce...I think that's the best sub option for these
1 1/2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
1/2 c. milk--I used vanilla rice milk...because that's what I had!

Mix wet into dry and don't overmix--there should still be slight lumps in the batter. Scoop into muffin tins that have been sprayed with cooking spray. Recipe makes approximately 8-9 medium muffins, but it depends how big you want them.

Bake 20-25 min at 350 until they start to turn golden brown.

1/4 c. sugar
1/4 c. melted butter (or EB)
1/2 tsp cinnamon
[this is cut in half from the amounts on the recipe because it makes more than enough]

Mix sugar and cinn. in a small bowl. Dip warm muffins into melted butter then into sugar mix. Drool a little, then eat.

French people don t eat muffins... And even if they would, it wouldn t be for breakfast... But the recipe looks nice nevertheless thanks

I guess whoever the recipe originated from decided differently regarding the name. Oh well.

I know it's healthier because its vegan but the salt and butter scare me, those two ingredients combined can hurt if you abuse it. But wow looks delicious!

Looks good! I will try this recipe someday when my parents aren't around, because they get fat easily.  :p

The recipe was great, the attach picture look like I want to eat them so I think I will try this one! I been member for a couple of month but this is the first time I visit this link/thread for recipe as I remember... I love it!
