Hello everyone,

new to vegetarianism... very new if you have not read my other posts. I really have no idea what vegetarians eat... This week I learned about chickpeas (garbonzobeans). I have never heard of these before, I have no idea what they taste like or how to cook them, but... this week I have heard a lot of good things about them, including massive health benefits and high amounts of protein. Enough to possible replace meat protein sources in a traditional diet.

A few trips to the grocery store I could not find them anywhere, I thought it would be in the fresh produce... lol... now I know they are similar to pinto beans, they come in bags and need to be boiled for hours on end. Good thing about this is I can make large amounts, freeze and store for later use. So I have decided to give this a try...

I just put on my first pot of chickpeas and I am going to experiment with them. A coworker of mine today said he heard that chickpeas can basically be thought of as chicken or meat. Meals that I am used to eating with chicken or meat can in some way be replaced with chickpeas. He also heard of a guy using chickpeas as the bun in a burger rather than the patty... interesting idea

So what I need from you guys are recipes, and images if you can find them, of meals that can be made with chickpeas or your own home recipes. I have heard of chickpea nuggets but i cant find an easy recipe for it. As well if anyone knows how to make the bun of a burger with chickpeas, that would also help me. Im also looking for quick meal ideas to make with preboiled chickpeas that I can whip up in seconds / minutes. What are your favorite chickpea meals?

I love, love chickpeas. Soaked some last night and will finish them up in the pressure cooker tonight. Then I'm going to make it into some baked falafel (vs deep fried) and use the falafel in some veggie wraps. Delicious.

That looks delicious. Never heard of veganaise before. Looked it up, more fat than I'd like. Does anyone have a lofat alternative?

I just made the chickpea salad sandwich (mock tuna). I wanted to give it a try and see what it tastes like.

I got to say, I am VERY surprised. It was really good and I made it with all the same ingredients I would normally put in a tuna sandwich. I will be putting this into my regular diet for sure!

if anyone has any other chickpea recipes please let me know. I want to try out many different things

The last time I made hummus I used curry powder in place of cumin. I made a wrap sandwich with that, veganaisse, chopped green pepper, and onion. I ate trying to figure what it reminded me of-egg salad. It tasted just like egg salad- the curry really gave it a more of that taste.

Chickpeas do go well in curries. Broccoli, cauliflower, carrots, spinach and chickpeas with a curry sauce.

Chickpea Old Bay nuggets-
about 1 cup chickpeas, mashed
1/2 a block of firm tofu mashed
finely chopped onion, pepper, celery
Old bay seasoning to taste
Mix throughly, roll into balls, and press into panko crumbs.
Lightly fry - preferably in a cast iron as they won't stick.

Yay, I didn't know that...I never seem to finish a whole tub before it goes bad, so now I'll try freezing it.

You can also dilute it down a little and mix it in with cooked spaghetti to make a quick meal. (Add some fried onions too, for extra flavour).

Oooo...like the spaghetti and onion idea! For a while, I was using hummus in place of salad dressing on my salads. I was surprised how good it was.

It's sometimes surprising what you can freeze - (off topic) - I also freeze fresh chillies - I buy them in packets when they are reduced in price at the supermarket, and just throw the packets straight into the freezer. When you get one out, you just need to hold in in your hand for a few seconds and it will start to defrost. Or cut it up frozen and use it like that.

No room in the fridge! I was curious, because sometimes I have coupons ready to expire.
It was somewhat curdled looking, but tasted okay. Won't do it again.

I gotta add my thing about roasted chickpeas-every recipe calls for at least some oil, and drying them well. I've done that about 3 times and never had them come out as crispy or evenly roasted as I'd like. Most were rather rubbery or hard.
I tried just letting them air dry in a colander then just throwing them on an ungreased pan with seasoning, and roasting at 450 F. for about 30 min. or so. They always come out perfectly crunchy.

I personally love chickpeas just thrown on my salads. I can eat them plain with Earth Balance and salt and pepper too. I also love them as falafel, hummus, chickpea soup, chickpea curry, tossed into my stirfry, baked until crispy... they're probably one of my number one favorite foods.

Also, to the OP, you can buy them dried in bags, but also in the canned food section in the same place as black beans, pinto beans, kidney beans etc... they're all set to eat right from the can after a quick rinse, and while they're a little more expensive (and sodium laden) that way, it's nice to have in the pantry when you're pressed for time.
