The last time I made hummus I used curry powder in place of cumin. I made a wrap sandwich with that, veganaisse, chopped green pepper, and onion. I ate trying to figure what it reminded me of-egg salad. It tasted just like egg salad- the curry really gave it a more of that taste.
Chickpeas do go well in curries. Broccoli, cauliflower, carrots, spinach and chickpeas with a curry sauce.
Chickpea Old Bay nuggets-
about 1 cup chickpeas, mashed
1/2 a block of firm tofu mashed
finely chopped onion, pepper, celery
Old bay seasoning to taste
Mix throughly, roll into balls, and press into panko crumbs.
Lightly fry - preferably in a cast iron as they won't stick.
