Vegan Icing Pls? - VeggieBoards

I need a vegan Icing recipe that isn't extremely sweet or really runny. Everytime I've used recipes out of my vegan books it's way too runny, but I never want to add more icing sugar because it's already so sweet. We're having a family reunion tomorrow and my mom (cake decorator) is being gracious enough to let us make a cake also, so that the kids can have a piece. I need a recipe ASAP

Vanilla, chocolate or other? Here is one with vegan cream cheese - these tend to hold up very well. I often add chopped nuts to my cream cheese frosting when I make carrot cake, and they help give it body too.





Ingredients:
  • 1 container Tofutti Better Than Cream Cheese
  • 1/2 cup soy margarine
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 1/2 tsp lemon juice

Preparation:

Combine the cream cheese and margarine. Slowly add the powdered sugar, then vanilla and lemon juice.

I second a vegan cream cheese frosting, they're rich, creamy and always 'look' really nice. My icing used to be runny and make my cakes look like a right mess, but now I do a cream cheese one or I use Trex (vegetable fat) and soya butter with powdered sugar and vanilla.

Used this one for a birthday cake... chocolate flavour and REALLY nice!



Easy Vegan Chocolate Frosting Recipe

Ingredients:



3 ounces unsweetened chocolate

2 tsp vegan margarine

1/4 cup hot water

2 cups powdered sugar

1 tsp vanilla extract

Preparation:



Over very low heat, or in a microwave on low power, melt the chocolate and vegan margarine together.

Transfer to a mixing bowl and add the hot water. Slowly stir in the sugar until the frosting is creamy. You may not need the entire 2 cups of sugar.



Add the vanilla and stir. Allow the frosting to cool.
