sorry to ask, but I've never cooked them before, and I'm making a soup. Do you use the stems? the seem pretty thick and course.

i use the stems on all greens. i stem the greens and chop the stems finely to use in whatever i am making in addition to using the leaves. it seems wasteful to me to toss them.

I don't actually use the stems when I am cooking, unless they're chopped very fine. However, I did used to have a pet bearded dragon who loved to eat them! Made for much less waste.

well, I used just the leaves, and took the spine out. I wish we could get to the compost bin, but we just got a bunch more snow!

it all depends on your personal taste. i wouldn't use them only because they would take longer to cook than the greens themselves and you'd end up over cooking the greens if you leave them on.

I use them in everything but the most quick cook applications, and in those instances I keep them to add to my stock pot.

hmmm, haven't made my own stock yet, but they could be frozen for that I guess.....the compost heap would like them too in the summer!
